Have to jump on this again soon. Amazing Greta Valley free-range pork Porchetta from @garysmeats Salted and air-dried in the fridge for 24 hours. All up about 1.5 hours on the @kamadojoe Big Joe. Initially indirect over a mixture of super hot @firebrandbbq Premium Lump and Briquette Charcoal at 600f then dropped the temps to 280f to cook through. Crackling goodness!
