This is what I told myself this week as I signed the lease to my new apartment ( I may, or may not have been tearing up 🤐). Making a BIG life change is pretty dang scary.
But you know what’s scarier? Regret.
I’m terrified of change and moving out of my bestie @mommalicht & @robertlichtdds house and of course my fabulous ceiling.
Chaya 🗣 STOP 🛑 being afraid of what can go wrong and start being excited for what can go right.... and YES all things are difficult before they are easy.
I’m thinking, and focusing on all the fabulous and fun things I can do in the new kitchen, in my studio, in the CCHQ, I reached out to N ... who you might meet cooking some exciting things on my page.
I might do some cooking classes with developmentally delayed kids. Now that I have my own space.
I might do ______?

🌸 #Shavuout has become a celebration of when hashem gave the #Torah to the Jewish people at Har Sinai.
The marriage that created the #Jewish people!
I mean process that. What a day 💥!
Matan Torah was a far reaching spiritual event, one that touched the essence of the Jewish souls for all time, a day where everyone was healed from ANY ailment.
This year I pray for what Shavuous represented that day, closeness, healing, purity, miracles, forgiveness and being chosen.
In seven weeks we went from just freed slaves to “Na”Aseh V’nishmah”. Can you imagine that!? See what Hashem can do?
Hashem does that every single day.
When I think of that, I’m blown away about what can occur in such a short period of time.
Look at the trajectory of the Jewish people. Miracles. Every day.
I know it’s hard to believe, and see, yes they happen.
This year I wish Shavuous to bring you all miracles and healing to however you may need it, be it physical, spiritual or emotional. Sending warmth, love, and inner peace this ❤️😘 YomTov.
Thank you all for being the reason I have this beautiful community I’m so proud of every day.

🥃 Bourbon Caramel Liquid Gold.
This was part of an insane recipe I posted back in 2015... one of you guys reminded me about it. So THANKS ❤️. Hello. Pour it on your cheese cake, dip your apples, or sneak it into the back of the fridge and shamelessly 👇🏻💧👄. No judgements.
1 cups sugar
1/4 cup water
1 tablespoon light corn syrup
1/2 cup heavy cream
1/4 cup bourbon
1/2 Tsp Vanilla X
In a medium saucepan, bring the sugar, water and corn syrup to a boil over high heat. Cook until the sugar is dissolved, washing down the side of the pan with a wet pastry brush. Continue cooking, without stirring, until an amber caramel forms, about 6 minutes. Remove from the heat and carefully stir in the cream. Let cool for 1 minute, then stir in the bourbon + Vanilla X. Bring the mixture to a boil over moderate heat and cook, stirring, for 1 minute. Let the caramel sauce cool slightly and serve warm or at room temperature.
Transfer to a heat-safe dish or bottle and let cool. Store covered in the refrigerator and bring to room temp or heat in a warm water bath before serving. French Bread Rolls 🇫🇷🍞

French Bread Rolls
1 1⁄2 cups warm water
1 tablespoon active dry yeast
2 tablespoons sugar
( Proof water, sugar, yeast )
2 tablespoons olive oil
1 teaspoon salt
4 cups bread flour @kingarthurflour ( Once the yeast is active, Mix all the ingredients in the mixer for about 5 minutes- it will be a very sticky dough )
Mix together warm water, yeast and sugar and let stand for about 10 minutes.
In large bowl, combine yeast mixture with oil, salt and 2 cups of the flour.
Stir well to combine.
Stir in remaining flour 1/2 cup at a time, beating well after each addition.
Turn out onto a lightly floured surface and knead until smooth and elastic.
Lightly oil a large bowl and place dough in and turn to coat with oil.
Cover with cloth and let rise in warm place until doubled, about 1 hour.
Deflate the dough and turn out onto floured surface.
Divide dough into 16 equal pieces and form into rounds.
Place rolls onto lightly greased baking sheet at least 2" apart.
Cover rolls with cloth and let rise until doubled, about 40 minutes.

😍A kolach is a type of Czech pastry that holds a portion of fruit, surrounded by a puffy cushion of supple dough. I haven’t tried them yet. But who really cares when they are this cute??? It’s the outside that counts sometimes 😉
For the dough:
1 cup whole milk
10 tablespoons butter , melted
1 large egg plus 2 large egg yolks
3.5 to 4 cups all purpose flour (17.5 ounces)*
1/3 cup sugar (2.3 ounces) I added 2 T extra
2 1/4 teaspoons instant yeast
1/2 teaspoon salt
For the cheese filling:
6 ounces cream cheese , softened
4 tablespoons sugar. I edited this
1 tablespoon flour
1/2 teaspoon grated lemon zest
6 ounces (3/4 cup) ricotta cheese
For the blueberry filling
10 ounces frozen pineapple , blueberries, or cherries
5 tablespoons sugar
4 teaspoons cornstarch
For the streusel topping:
1 tablespoon all purpose flour
2 tablespoons sugar plus 2 teaspoons
1 tablespoon unsalted butter cut into 8 pieces and chilled
For egg wash
1 egg mixed with 1 tablespoon milk

I’m attempting to let go and not be such a perfectionist with this page.... 😱. Even just typing that brought me a little inner anxiety 💆🏼♀️. I’ve worked SO hard posting really beautiful photos, which truth are NOT easy for me and super time consuming, and I raised the bar so high that it’s sometimes exhausting to get that perfectly perfect staged photo.
This ladies and gents was my first shot, and I said Chaya... let it go. Just post it.
Also, cooking doesn’t always come easy to me and, I’m NOT a photographer... everything I know I’ve taught myself... trial and error. Im kind of proud.
The reason why I don’t post so much is because I want it .... to be perfect. But like life, nothing is perfect... I KNOW, EVEN ME ☺️. I’m going to try some snap and post photos. Do you guys like more “staged” photos or more candid and easy shots?
Anyway, I bought these delicious Ciabatta Rolls @traderjoes ... toasted it with some Gouda ... and poached myself an egg 💥! Delicious.
1. Bring water to boil with a splash of vinegar. Meanwhile, crack eggs, one at a time, into colander. Let stand until loose, watery whites drain away from eggs, 20 to 30 seconds. Those make the weird whispy things. Gently transfer egg to a small shallow ramekin | Bowl.
2) Stir the water to create a gentle whirlpool | vortex to help the egg white wrap around the yolk.
With lip of ramekin just above surface of water, gently tip egg into water.
Either A) Cover pot, remove from heat, and let stand until whites closest to yolks are just set and opaque, about 3 minutes. If after 3 minutes whites are not set, let stand in water, checking every 30 seconds, until eggs reach desired doneness.
Or B) Cook for 3-4 minutes or until the white is set ( I do it this way )
3. Using slotted spoon, carefully lift and drain each egg on a paper towel. Season with salt and pepper to taste, and serve.
👄🧀 Cacio e Pepe
A Fancy Nancy term for “cheese and pepper” 🤷🏼♀️. Um. I used a #GlutenFree pasta.
Ok, 🛑 Stop, don’t roll your eyes it was YUM!
The Egg Pasta is from @traderJoes fridge section and it’s made up of Brown Rice Flour, Potato Starch and Tapioca ... in case you’re 🤔 curious.
Don’t be judging me favorably on the gluten free front, I’m not on a diet or anything 🙈.. my sister said this pasta is amazing and I’ve been craving it ever since... We kinda have twin taste buds,for the most part 🙅🏼♀️ fish.
I used Pecorino + Parmesan Cheese from @thepomegranatemarket they have the most gorgeous selection of CY Cheeses.
Heat 3 TBS butter and about a 1/2 teaspoon ( or more ) of fresh cracked black pepper in a medium skillet over medium-low heat until ingredients are fragrant & pepper is barely starting to sizzle, about 1 min.
The key to it’s creamy dreaminess is cooking the pasta in very little water ( just 2 cover the pasta ) then using that starchy water to create a creamy sauce that doesn’t contain any actual cream. I know so strange right?
Cook till pasta is almost al dente ... typically about 1 minute less than the package recommends.
Transfer 1/2 Cup of pasta cooking water to the skillet with the butter pepper mixture.
Stir in 2 TB Extra Virgin Olive Oil.
Bring to a simmer.
Using tongs, lift pasta and transfer it to the oil/butter mixture.
Add cheese + 1 TB olive oil.
1/3 Cup #PecorinoRomano cheese
1/2 Cup freshly grated #Parmesancheese
Stir vigorously with the tongs for 2 minutes. It may look like it’s not going to come together, but give it time and a lot of force. Add a few more tablespoons of pasta water to the skillet to adjust consistency ( if it’s clumpish or dry ) until the sauce is creamy and coats each strand of pasta . Season to taste with salt +!pepper. The dish should be sharp and peppery.
Tip: Grating the cheese very finely on a Microplane instead of shredding it helps it incorporate more smoothly
Tip: You must-must-must use freshly-grated cheese for this dish. The pre-grated stuff doesn’t melt and gets weird. Trust me. #firstname.lastname@example.org@foodandwine

4) Is the pool completely private? YES! it’s me and the birds. Literally beautiful birds flying around. That’s all. BUT they also have large beautiful pools on grounds.
5) What else is their to do on grounds? I’m going Kayaking, to the spa, on a breakfast boat ride, to the gym, to the beach, having private BBQ, a kosher wine tasting, some workshops... 6) Is the hotel familiar with Shabbos & Kosher. Short answer ABSOLUTELY... they even deactivated the indoor doors, and came to check on ya during the weekend knowing we couldn’t call. Tell them your kosher for a complimentary bottle of kosher🍷(See Photo)

I tried out @mishpachafoods Challah flour ( high gluten ) for the first time and my Challah’s came out stunning 👍🏻👌🏻. Whatever it is. That height tho 😍. There is the tradition of baking a special type of challah for the first #Shabbat after #Passover. Made either in the shape of a key or with a key baked inside ( Mine is on the bottom) the special bread is known as shlissel challah, with shlissel being the Yiddish word for "key." The custom is popular in communities that descend or have traditions coming from Poland, Germany, and Lithuania.
The making of this particular shape or style of challah is considered by those who bake it to be a segula (ritual or good omen) for parnassa (livelihood). There is a metaphorical description of that place in heaven from where blessings come. G-d’s blessings, such as health and wealth, are stored behind gates. On the high holidays, we ask G-d to open the gates of heaven for our prayers. At this time of year, right after Pesach, we ask G-d to recall how He opened the gates of sustenance for the entire nation of Israel in the days of Joshua after Pesach. By impressing a key into our challah, we are asking that we too should have the key we need to open the gates of sustenance properly placed and turned for us. The “schlissel,” which is the Yiddish word for “key,” should unlock the gates of sustenance for us just as it was for the nation of Israel after their first Pesach in the promised land.
