Breakfast can be a hard meal to navigate when cleaning up your diet. There seems to be two main camps when it comes to what we eat for breakfast. One includes sugar laden, high carb foods such as cereal, bagels and pancakes. The other, some version of eggs which can get boring. . There is another option though. Eat whatever healthy food you want. Breakfast is just another opportunity to nourish your body with quality protein, veggies and healthy fats. I will often eat leftovers from dinner the next morning. . Today, I threw together half a sweet potato, shredded buffalo chicken and cruciferous salad blend in a skillet. Then I topped it off with half an avocado. Amazing! . If you’re getting burnt out on eggs, trying being more creative in the morning with items from your fridge. I typically do one meal a day (OMAD) twice a week, 18:6 twice a week, and 20:4 three times a week. I’m not sure why, my hunger and schedule just kinda of dictates how I’m going to feed on any given day. COTTON CANDY NICECREAM 🦄 Back in the day, ICECREAM was my junk food of choice. It’s what I would reach for after a long stressful day. Rocky Road was my favorite flavor, followed closely by Chocolate Peanut Butter Cup. 🍦At the time I didn’t realize I was trying to feed an emotional need with food, or that I was intolerant to dairy. The result was I would always feel horrible afterwards. Mentally and physically! Since then, I’ve learned ALOT about nutrition, and how my body reacts to certain foods. I’ve learned more healthy coping mechanisms for stressful times and no longer feel the need to devour an entire pint of ice cream in one sitting. I do HOWEVER still enjoy icecream! I love the flavors and the cold creamy texture! I am so SO so glad I have discovered NICECREAM! 🍌It’s kinder on my body and since it’s made with bananas rather than refined sugar and cream, it doesn’t send my blood sugar on a crazy roller coaster ride. It’s also a fun way to give your kiddos a treat that’s actually good for them! To make this 🍭COTTON CANDY VERSION: * blend three frozen bananas with 1/4 cup full fat coconut milk and three to four tbs @navitasorganics pomegranate powder in your food processor until nice and creamy. Remove from food processor. * Blend another three frozen bananas with 1/4 cup full fat coconut milk and two to three scoops of @e3live spirulina powder. * Spoon both colors into a parchment lined bread pan and stir around a bit to create a nice swirl! * Top with some dark chocolate chips or cacao nibs. * Enjoy and freeze the extra for another day!

My health crisis causing culprit. Symptoms began in April 2013 and steadily increased over time. Medical attention sought immediately upon discovering internal bleeding in late July. # September 2013 # Knocked back a carton of whole milk to fight off the hunger pains and ended up with my esophagus swelling half way shut. Terrified was an understatement. Discovered this after being told how to do an elimination diet by a CRNP at my former employer after she overheard an RN that knew I wasnt doing well asked if I was able to find out anything. Words cannot describe how grateful I am to that CRNP. If it wasnt for her her suggestion, would not have discovered the Paleo lifestyle in passing while researching about elimination diets. She gave me better advice and was actually willing to answer questions that GI #1 did not. # By October 2013, I was unknowingly in my 1st Whole30 round. The first 10 days was absolute torture and the keto flu was insane. Didnt do much of anything outside of going to work. Diet mostly consisted of salads, chicken broth, steamed fish, steamed veggies, and unsweetened/organic apple sauce with coffee, almond milk, water, coconut water (treat back then). The first thing reintroduced was Lactaid milk and that reaction was BRUTAL and eliminated the lactose theory. Once that calmed down, had a bowl of Special K with almond milk. Once again, another reaction. It wasnt the wheat that set me off because I had some saltines with my soup 3 days prior (food diary). What I discovered was in ingredients called sodium caseinate. Upon further research, discovered it was in many things. Even had a tub of casein protein in the kitchen along with good quality when isolate for post workout recovery. From that moment forward, anything cows milk went bye bye. # In a way, it was a bit sad. Technically a flexitarian, but geared towards lacto-ovo vegetarian 90% of the time because meat was out of budget back then. Dairy was my main source of protein back then. Thankfully, Aldi had reasonable fish and chicken prices. Not the quality preferred, but better than nothing.

Someone DM’ed me this morning asking if I ate veggies. Answered: YES!!! (Apparently I don’t post many pics on IG bc they’re so simple looking) ... I love vegetables! I eat lots of raw vegetables in the summer: lettuce, celery, tomatoes, cucumbers, etc. and I eat lots of roasted vegetables in the winter: carrots, broccoli, brussels sprouts, etc. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Dinner the other night was a veggie bowl consisting of: spinach, kale, carrots, broccoli, artichokes & avocado. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ The reason I love veggies so much is because in my mind they’re entirely a FREE FOOD. Meaning I could never eat too much of it, or feel bad that I overindulged with it. Vegetables are incredibly low calorie and packed with so many vitamins and nutrients. 🥦🌽🍆🥗🥒🥬 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ EAT YOUR VEGGIES, HOMIES!

It feels SO DAMN GOOD to not have calories and weight control my wellbeing. . . . When I first did 30 days of plant based almost 3 years ago after religiously weighing myself and counting everything I ate I was TERRIFIED. What if I gained weight? What will it be like to not track my meals? What if I lose control? What if the sugar and carbs makes me fat? What if my clothes won’t fit? Won’t my muscle dissolve into thin air without protein? . I had so many issues it’s crazy to even think back to them without being a little sad that this mindset was once my own. But I gave it a try anyways, and the rest is history. I promised myself then I wouldn’t count or track or weigh anything again and, for the most part (besides getting weighed while being pregnant), I haven’t. . . Naked Taco’s today for lunch. I use @godairyfree taco seasoning and brown my meat, drain fat, add the seasoning, 1/2C water and simmer. I also did a bag of @aldiusa cauliflower rice with some cilantro and a lime squeezed over top. The salsa is #whole30compliant as is the guacamole. These are both from aldi and saved in my highlights. I always double this recipe and use the meat all week for salads, taco bowls, quesadillas for my kiddos. And in my mind every day is #tacotusday 🙌🏻 I am continuing my healthy eating lifestyle post whole 30 and have made some great adjustments to my diet from what I learned! Weve started incorporating my 5 yo into menu planning and it helps him feel involved and then hes more willing to eat leftovers for lunch or snack. Today was my first official day back at WW for weigh-in. It’s amazing how supportive they have been throughout my Whole30 experience! . They gave me my 50lbs charm, which I had not even realized I had earned. So that’s really exciting! . This week I’m up! It’s only by 0.8lbs, so I’m not going to worry about it too much. But this was something I was concerned about! . I lost a lot of weight over the last 30 days during my W30. More then my body is used to and there can be a rebound effect. . I have been worried that when I start bringing back all the foods I want to eat again, that the weight will pile on! . I will am going to continue with my reintroduction as planned and pay attention to my NSV, my body and the scale! . At this point, I will rely on the WW point system to help me stay positive and maintain a healthy mindset as I proceed! . I have been within my healthy eating range all week and earning rollovers. (Just omit the bacon) The key to the delicious flavor is cooking the onions a long time! I started with one slice of pastured bacon and cooked until halfway done; then add the onions and cook until very brownded. Happy Face to Face Friday! It was after Christmas 2016🎄 that I finally committed to getting healthy. I saw all the pictures from that holiday and was so disgusted with myself. I really didn’t realize I had let myself get to that point. Thanksgiving the following year was amazing. I found out I was pregnant two days before the picture on the right was taken, I was happy, on my journey to optimal health, and down 73 lbs. Anything is possible with a little bit of discipline, hard work, and determination!

Day 25 of my first ever Whole 30. All things considering, it is going well! It hasnt been easy and I still miss chocolate and bread, but not nearly as much as I did earlier in this process. This Whole 30 has sent me spiraling into lots of reading and thinking about food and what this means for our family going forward. No major decisions yet but Im mulling over a lot.
