In modern times, stainless steel if definitely the pick for most wine makes as the pros far outweigh the cons. The most oblivious that stand out for winemakers include the durability of tanks, the cost associated, purity of the wine produced, and cleaning required. Despite this, there are desired tastes that cannot be achieved when fermenting wine in stainless steel vats as opposed to oak barrels. To assist in ensuring the best out of their wine, many wines produces will opt to incorporate the two methods depending on the wine variety.
Oak barrels are known to infuse flavor and add additional structure into the wine. This is a result of a slow release of oxygen and water. Depending on the variety of timber used to create the barrel, this can have a diverse flavor effect of the end wine. Flavors that can be associated with utilizing oak barrels include coconut, butter, vanilla bean and on overall wine that tastes more creamier, but this can be different depending on American oak or French oak. Stainless steel also makes great containers for wine due to the neutrality of flavor. As a result of this, no additional aromatic components are transferred into the wine. Winemakers can work with this in order to create a more pure, crisp and refreshing variety of wine. Some trademark flavors that come from stainless steel fermentation include a wine that Is commonly found to more fruit-driven and more crisp in flavour.
