Here’s some bangin cinnamon pancakes 🥞 I whipped up for the boyf and I ⠀
Here’s how I made em for 2 servings!⠀
⠀ 🌾 1 cup whole wheat flour ⠀
🥄 1 tbsp baking powder ⠀
🧂 pinch of salt⠀
🍁 Sprinkle of cinnamon ⠀
🥛 1 cup plant milk of choice ⠀ 🥄 1 tsp Vanilla extract ⠀
🍁 2 tbsp maple syrup ⠀
🍎 2 tbsp Apple sauce ⠀
1. Mix dry ingredients in a bowl than wet ingredients in another bowl. Mix wet & dry together then add a handful of raisins⠀
2. Heat up skillet and fry then pancakes up! ⠀
3. Top with more cinnamon and syrup 😍

Aaight... so this was most of what he did during his workout with me (minus some core work I didn’t record). Some stuff to get the blood pumping with small challenges added in along with some weights. The difference between me and other trainers... I make my clients EARN their weights. Heavier weights are brought out once I know the core is strong enough to bear it and form is on point. I think this one is ready! 😉
Perform 3 sets of the following:
1) inch worm with 2 push ups for 20 yards
3) 2 lunges with a frog jump for 20 yards
4)Single arm kettlebell swing with pause at the top x 10 on each side
5) Underhand chest press x 15 reps
6) Bosu Dead bug chest press (do not try to go super heavy here until you’re used to the movement- this is more so a stability move) x 15
7) Inverted Bosu Spider-Man push ups x 10 each side

Miso mushroom and cabbage Risotto 🥬🍚 Who doesn't love a big bowl of yummy miso rice on these winter nights!?! I made this risotto this week after seeing so many people eatting mushroom risotto. I decided to add a miso twist and I am glad I did.
BTW, I know all my bowls look the same. I just love adding extra greens to my plate and this tomato looked too good not to include. I will try and make my plates more photographically exciting but I can't promise anything. 😁 *Ingredients*
4 cloves of garlic
2 Celery stalks
1 tsp sage
6 large cabbage leaves
350g Risotto rice
1 tbsp miso
500ml veg stock
200g pumpkin puree (optional, I just had some leftover)
A handful of parsley
Salt and pepper
Olive oil *Method*
Finely chop the onion and the garlic and add to the pan with a drizzle of oil. Once the onion is translucent add the Celery. Sprinkle 2 tbsp of water sage and salt and pepper and leave to on a low heat.
Chop the cabbage and add to the pan. Stir well in the miso. While the cabbage is cooking chop the mushrooms, I like them chunky. When the cabbage has turned a dark green and is soft add the mushrooms and cook for 5 mins. Add the rice and stir well. After a few mins coat the rice with stock and leave to simmer on a low heat. Keep stiring regularly to make sure it doesn't stick. After 15 to 20 mins when the rice has cooked and soaked up the stock, stir through the pumpkin and cook for 10 more minutes. Add more water if need.
Season to taste and stir through a large handful of Parsley. Now enjoy, you deserve it!
@coopuk have stocked the @vego_chocolate spread which is literally a little tub of heaven, I just wish Vego was a bit less expensive to buy as its £3.30 for a little tub and I’m trying to cut back my spending on treats 🥺 it’s still the best vegan chocolate though 🍫

Stop moaning at me! The smoked Cheese is staying 😅 I just need an easier way to produce the damn thing 😆 In the mean time, you have to try the Vegan Feta *cough* Trimma *cough* cheese as it's making a come back for me personally.
It's the texture really. Has a bit of bite with the firmness but has that lovely melting on the tongue experience that many love.

Pear & Blackberry Parfait Ingredients:
1 cup blackberries
1 cup vegan granola
1 cup chopped pears
1 cup Forager Project Cherry Cashewmilk Yogurt
1. Layer ingredients for parfait: start with cashewgurt, followed by granola, blackberries, and pears.
2. Repeat until the jars are full.
One year older and so much stronger. 💪🏻🥳💪🏻
I actually really enjoy looking back on my years to reflect on the woman I have evolved to be. 😌
I have grown physically, spiritually, mentally, painfully, and happily along the way. And for all of it, I am thankful. 🙏🏻
Sure there were times I would have liked to change with maybe a better outcome...😅But hey, those times are what make life more interesting, right? 🤷🏻♀️
