Last minute Back-to-School prep (tomorrow is the big day!) includes prepping for lunches and breakfast.
I L-O-V-E these sausage and cheese breakfast sandwiches. They are easy to make, freeze and reheat well and are a great home-cooked breakfast option for students (and parents)! To Make:
Cook your favorite bulk breakfast sausage until browned and crumbled. Drain off the drippings and melt in some classic, original velveeta cheese. Keep stirring over low heat until everything is creamy and combined. The cheese to meat ratio is completely up to you. Start small and add more as you go until it’s the consistency you want.
While the meat/cheese mixture is cooking, split and toast some English muffins. Top the toasted muffins with the meat mix and make your sandwich. Wrap in a paper towel (saves a step when you reheat) store for a few days in the fridge or a few weeks in the freezer.
I used 2 packs of sausage and 12 muffins. I had a few extra muffins after using the sausage mix (I overstuffed them) so I used the others for plain ham and cheese. #variety
To reheat, just zap it in the microwave 30-45 seconds if thawed, 50 seconds to a minute-20 if frozen.
