This morning’s homemade vegan breakfast/brunch was baked tofu slathered in @annieshomegrown maple barbecue sauce, organic cremini mushrooms sautéed in organic extra virgin olive oil, Himalayan pink salt, crushed red pepper flakes, garlic granules and black pepper, red/yellow/orange bell peppers sautéed in white balsamic vinegar and scallions, @daveskillerbread spread with @earthbalance vegan butter and apricot & blackberry preserves and vegan brown sugar with cinnamon spice. While I was making that, my husband, whom I greatly adore, made fresh squeezed organic orange juice and organic fresh carrot juice.

Tofu steaks, homemade paprika chips, garlic butter roasted corn on the cob and some asparagus, tenderstem broccoli and peas. This was so damn good omg. Veggies and potatoes were all reduced but it was from a Sainsbury's local in London so I guess that makes it a regular price. Yum i cannot stress how much I like tofu steaks!!!! Going to have to keep an eye out for some reduced tofu so I can stock up!
So #HealthyCanBeTasty aint just a hashtag but something I genuinely believe in.
Plus it's super obvious considering the many examples I see others around me creating and have even made, myself.
And if this weren't true, I think I'd definitely be in very deep 💩 hahahaha.
Ok on a more serious note, have started a simple experiment of having one vegan meal a day and one vegan day a week. It's not hard to do this in India with so many options that are dairy free, meat free and cruelty free by default. I feel blessed in this regard but I also am glad to see the world over, there's a move in the healthier direction of more #plantbased#conscious eating.
But my favourite part is that this is possible without sacrificing taste because for me, life's too short to go on a punishment diet!!!🤠 Why do the vegan thing at all, you ask? ▶️ Coz it's haunted me for a long time that I grew up eating meat and found it so hard to quit despite being an animal lover.
▶️ Because my hormonal imbalance is making life impossible and meat & dairy are the two biggest triggers for me, healthwise.
▶️ Because I've met amazing, inspiring people like @MayaviKhandelwal of @mypurepath who made me believe being vegan didn't involve sacrifice and deprivation but the opposite - indulgence and celebration! Also she didn't shame me or guilt me into wanting to try eating and making more vegan delights [unlike the many, many militant vegans I have met in years past]. *More in the comments

Amasse com um garfo 250g de tofu. Refogue em uma frigideira antiaderente um fio de azeite de oliva com uma colher de chá de: alho em pó, cúrcuma (açafrão) e temperinhos em flocos (gosto da mistura para vinagrete que é cebola, alho e tomate em flocos).
