Tonight’s dinner was @rachelshealthyplate Cajun White Bean & Sausage skillet!! I used a fresh tomato and a whole bunch of fresh spinach from my CSA! This meal was so low in points, so satisfying and so easy to make! .
1 package (4 links) Gilbert's Craft Sausages Andouille Chicken Sausages (or sub a smoked turkey sausage or turkey kielbasa*)
2 tsp olive oil
1 clove garlic, minced
2 cans cannellini beans, drained and rinsed
1.5 c chicken broth, lower sodium preferred
1 can tomatoes, petite diced
small bag of baby spinach, 5 oz
1 tsp onion powder
1 tsp cajun (or creole) seasoning
pinch of crushed red pepper
salt/pepper, to taste
Cut sausage links into ¼ inch pieces.
Heat oil in a large skillet over medium heat. Add sausage and cook for 3-4 minutes until sausage begins to brown.
Add garlic and cook for 1 minute, until just golden and fragrant.
Add in the tomatoes, chicken broth, beans, onion powder, cajun seasoning, bay leaf, and crushed red pepper.
Bring to a boil and then reduce heat to low and allow to simmer uncovered for about 15 minutes, stirring occasionally.
Remove bay leaf and taste - add salt and pepper if desired. (Many cajun seasoning blends will have plenty of salt so you probably won't need much, if any.)
In two or three batches wilt in the baby spinach. If nearly all of the liquid has reduced feel free to add in ½ c water or extra chicken broth. Allow spinach to cook down for 2-3 minutes. Enjoy!

You're going to LOVE sweet and spicy baked chicken legs -- the honey, soy sauce, ketchup, and Sriracha makes a heavenly sauce that's sticky and delicious! 😍 It's definitely finger lickin' worthy!
2 1/2 pounds chicken legs (about 10 legs)
3/4 cup honey
1/2 cup soy sauce
1/4 cup ketchup
2 to 3 cloves garlic, minced (or 1 heaping teaspoon of pre-minced garlic)
1 to 3 tablespoons Sriracha hot sauce
Preheat the oven to 350 degrees F. Lay the chicken legs out in a foil-lined baking dish with high sides (the foil is to make clean up easier — it’s not essential but helps a whole lot). A high-sided sheet pan is the best option because it has sides to keep everything in, but is big enough that the chicken isn’t drowning in the sauce. It will caramelize best if half of the chicken is poking out of the sauce while cooking.
In a glass measuring cup, measure out the honey, soy sauce, ketchup, garlic, and Sriracha, and stir together. If the mixture doesn’t combine well, microwave it on high for 30 seconds and stir again. Pour the honey mixture over the chicken legs.
Put the chicken legs in the oven and bake for 45 minutes. Take the chicken out of the oven, and rotate it so that the bottom that was in the sauce is now on top, out of the sauce.
Put the legs back in the oven. Raise the heat to 425 degrees F., and bake until the sauce is bubbly and starts to caramelize on the chicken legs. This should take about 15 minutes.
Remove the chicken from the oven, and allow to rest for 5 minutes before serving. Serve the sauce the chicken cooked in with the meal or over rice if you’d like.

Yummiest stir fry I ever threw together! Chicken and shrimp with peppers and onions on a bed of rice. Seasoned with epicure's Thai Peanut Stir fry seasoning... (but I skipped the peanut because my two boys don't like peanut butter. Go figure!)
Keeping it simple with this easy ghnoochi bowl. .

Using a food processor or slicer, slice the fennel into thin slices. Add some chopped parsley then drizzle with a bit of olive oil, lemon juice, salt and garlic powder. .
Tomato ghnoochi: for this I used store bought gluten free gnocchi and an easy tomato sauce recipe (recipe a few posts down)
BBQ tofu: press your extra firm tofu for 15 minutes. Then cube and marinate in your favorite BBQ sauce. I used the one by @goodfoodforgood. Then bake at 375 for 15 minutes, flip and continue cooking until crispy.
Simple Stir-fry Recipe
Okay with this cooler weather I am not down for having salads everyday.
Making sure I eat enough veggies can sometimes be a challenge so that’s were stir frys come in. They are very simple to make, great for those not used to eating lots of veggies and are very handy to use up left over veggies.
This stir fry recipe is one of my mom’s staple recipes. When we switched to plant based eating we replaced the chicken with tofu and find it is just as delicious!

🌱 1 block of firm tofu (for a crunchier chicken like texture, freeze the tofu and defrost it the night before you plan to make this dish)
🌱1/4 medium onion chopped
🌱1 cup of baby Bella mushrooms
🌱1-2 medium sized carrots
🌱1 bellpepper 🌱1 clove of garlic
🌱About an inch of ginger
🌱1 packet of soybean sprouts
🌱Low sodium Soy or Tamari Sauce 🌱1 tbsp of cornstarch
This dish ideally is accompanied with rice but you have it on its own as well. (I usually prep and leave my rice cooking as I cook the stir fry)
1. In a large pan, add 1 tbsp of olive oil add in the diced onion, garlic, and grated ginger, sauté about 2-3 min until translucent
2. After you have strained and diced the tofu let it marinade in about 1/4 cup of the soy sauce. Do this step before chopping all your veggies therefore it has time to marinade.
3. Add in marinated tofu to the pan carefully, and at medium heat allow the tofu to cook. Let it cook for about 7-8 min until the outer texture looks crunchy.
4. Add in the remaining veggies and cook for about 5-6 minutes. If the stir fry seems to dry remember that the mushrooms release moisture as well as the bell peppers.
5. Add in the soy bean sprouts and cook for about 5 minutes.
Quickly mix until all the clumps are dissolved 1 tbsp of water with 1 tbsp of cornstarch, this will thicken up the stir fry, it is optional but highly recommended.
6. Carefully mix everything and once everything looks incorporated turn off the heat, let it cool and it is ready to serve.
This stir fry recipe gives me a good 5-6 servings perfect meal prep to make ahead of time. Enjoy! 😋

🍕+🍝 on 🔂. Want to try this at home? Cook 1 box of Banza Ziti just under the recommended time on the box. Strain & rinse with cold water to halt cooking. Divide among 4 reuse-able bowls, add pizza sauce, mozzarella, mini pepperonis, and olives. Store in the fridge, and when ready to eat, microwave until the cheese is melty and bubbling. Enjoy!

Dort kann man im Supermarkt riesen Bruschetta Brot kaufen. Dieses haben wir in einer Grillpfanne geröstet (Toaster gab es nicht) und in einer 2. Pfanne Tomatenstücke mit ordentlich Knoblauch und Zwiebel angebraten. Mit etwas Salz und Pfeffer würzen und auf den Broten verteilen. Wir haben es noch mit Rucola und etwas Parmesan garniert. Perfetto sag ich euch!😋
Und jetzt noch ein Wort zu diesem gigantischen Ausblick! Er ist im idyllischen Bergdorf Baunei im Osten Sardiniens zu finden. Auf dem Balkon unserer Ferienwohnung konnten wir täglich den Sonnenuntergang bestaunen🌄

Here we are with another mouth-watering recipe “Bangladeshi Beef Bhuna” . Ever since we had this at one of our Bangladeshi friends place, this has become one of our favourite dishes. Takes a bit of time for the meat to get tender, but it’s worth all the effort. You could even use a pressure cooker to speed up the cooking process.
