Joy to table lunch:
Ginger-Cilantro Chicken with peanut Salad 🥙
This yummy salad was a breeze to make. If you plan ahead and have these items on hand it’s a simple family favorite for a light lunch or dinner. You can also add over brown rice to make it more substantial. The only thing I would of added was lime juice. Avocado would be a nice addition on top BUT I eat so much 🥑 that it was a nice break.
•1lb Chicken tenders cut in cubes
•2 tsp+ sesame and/or peanut oil
•1/4 cup roasted peanuts
•3 tsp minced ginger or more!
•bundle of garlic, minced
•1 tbsp coconut aminos
•2 tsp apple cider vinegar or rice vinegar
•1 cup fresh cilantro
•4 cups or more of shredded romaine or Napa cabbage
•lime wedges, green onions options
In a large skillet, heat oil over medium- high and heat. Add chicken and cook for a few minutes. Add the garlic, asparagus and ginger stirring often. Add more oil if needed. Add aminos, vinegar and stir until chicken is no longer pink. Remove from heat and add cilantro. Fill a bowl with lettuce and top with chicken mixture, peanuts, lime wedges and oranges.
Joy tip❗️Precook the 🐓chicken tenders on a night when you’re already in the kitchen making dinner. I added the tenders to the grill the night before along with our fish and it was ready to go for lunch. All I had to do was cut in cubes and add sauces to the skillet.

Simple and favorite comfort food meal ❤️ turkey meatballs (with carrot, celery, and onion) on top of zucchini noodles sprinkled with parmesan cheese.

When I first met Thomas 6 years ago, I was so intimidated by his skills that I just stopped trying.
But he was so encouraging, and he always said something that has stuck with me:
“What’s the worst that can happen? So what if it doesn’t taste great. It’s just one meal. Who cares??”
What’s the worst that can happen?!
Take👆🏻wild rice for example. I made it yesterday according to the directions on the bag and it was chewy/hard/terrible. So I added more water, simmered it a bit longer, and VOILA! It was delish!!
When you think about it, the true WORST that can happen is staying out of the kitchen completely.
Home cooked REAL food is so much healthier than takeout + processed food.

In meinem Bekanntenkreis geht das Gerücht um, ich wäre beim Essen sehr kompliziert. 😂 Aber ehrlich gesagt sind mir die einfachsten Dinge die Liebsten. Ein bisschen Karfiol, Knoblauch und was sich sonst noch an Gemüse im Kühlschrank findet in die Pfanne, Gewürze und Fetakäse druntergerührt und dazu ein Schälchen Couscous - that's it.
Cooked this up tonight and was prepared for the worse with Mr. H. Out of all of us he absolutely loved it! First night in a long time that he didn’t perform... may be a meal we have more often now 🤷♀️😂 Curried Sausages
1/2 onion diced
2 carrots sliced
1 Tablespoon Russian for Dinner
2 Tablespoon Curry Korma
375ml Evaporated Milk
1-2cups Green frozen mixed vegetables
1 cup Water
1 Tablespoon cornflour
Cook sausages in a fry pan. Remove from pan and slice.
In the same pan cook onion and carrot. Add Russian for Dinner and curry Korma and cook until aromatic. Then add in the evaporated milk frozen vegetables and sausages. Combine the cornflour and water and add to pan, stirring constantly until it thickens. Season with Stockmans Whip.
