I made my own recipe on Sunday for Lavender Dandelion Shortbread 🙂
12 Tbls Butter (a stick and a half), room temperature
1 tsp lavender flowers
1/4 c + 1 Tablespoon dandelion petals
1/2 c sugar
1 tsp vanilla extract
1 3/4 c flour
Make sure to use dandelion petals from a place you know wasn't treated with pesticides. Wash them and dry them well.
Crush the lavender into as much of a powder as you can (I use a pestle and mortar, you can use an herb grinder). Add the lavender, dandelions, butter, sugar, and vanilla to a mixing bowl. Mix until creamed together.
Add the flour and mix slowly until combined.
Turn out onto a counter, you may need a bit of additional flour to keep it from sticking. Roll the dough into a log about 2-3" in diameter. Wrap up and chill in the refrigerator for 1 hour.
Preheat oven to 350, cut the log into 1/2" thick disks. Bake on a sheet pan for 25min (until the edges are golden brown). Let cool on a cooling rack.
