This Dark Chocolate Coconut-Squash Cake I was a little skeptical - okay that's a lie, I was VERY skeptical - about. 🍫🍰 I didn’t come across anything similar online that I could base this off of, so my hopes getting something edible were quite low. To my beginner's luck, it turned out perfect on the first try! A perfectly dense, rich, dark chocolate cake. Probably going to make some more again tomorrow coz why not? Thanks to @paleofoundation and @sweetleafstevia I've got enough SweetLeaf® Stevia Sweetener to make these everyday for a month!🎂

Yield: 4½” wide x 1½” high cake | Calories: 380 (+40 glaze) | Prep time: 15 min | Cook time: 25 min

Ingredients:
3 Tbsp Coconut Flour (37g)
2½ Tbsp Unsweetened Cocoa Powder
1 tsp Baking Powder
¼ tsp Cinnamon Powder
¼ or 1 packet SweetLeaf® Stevia Sweetener (1g)
⅛ tsp Salt
1 Tbsp Coconut Oil, Melted
2 Eggs Room Temperature
1 Egg White
½ tsp Vanilla Extract
¾ tsp Apple Cider Vinegar
2½ Tbsp Almond Milk or Coconut Milk
½ cup Spaghetti Squash, Cooked and Shredded (75g)  Glaze
3 Tbsp Unsweetened Cocoa Powder
3 Tbsp Almond/Coconut Milk
1½ packets SweetLeaf® Stevia Sweetener (1.5g)

Instructions:
- Preheat the oven to 325°F. - In a small bowl, uniformly mix dry ingredients.
- In a large whisk together wet ingredients.
- Sift dry ingredients to wet and whisk to form a thick batter. - Transfer spaghetti squash in and stir till incorporated. - Beat egg white using a hand mixer to form stiff peaks. Gently fold into batter. - Grease 2 5” x 5” inch glass dishes or cake pans and pour batter in, flattening with a spatula. Bake for 30 minutes or till a toothpick inserted into center comes out dry. - Remove from oven and cool for 15 minutes.
- In a small bowl, combine ingredients for the glaze.
- Spread glaze between cake layers, on top and along sides!

Piccadillo for dinner. One pot, grassfed beef + whatever veggies were in the fridge: red bell peppers, carrots, spinach + pantry staples: onions, lots of garlic, and gold potatoes. Pimenta a gosto
Sal a gosto

200g de queijo muçarela ou cheddar -
Modo de preparo:
Misture os ingredientes do hambúrguer e amasse bem com a carne , deixe repousar 10min.
Pegue 100 g da carne temperada e faça um disco de 10 cm de diâmetro.
Recheia com queijo,
Cubra com carne moída, dobre as pontas e feche bem.
Leve à chapa untada e deixe grelhar por 7 minutos de um lado e depois vire, deixando 5 minutos do outro lado.pode ser feito ao forno na frigideira ou  airfryer .

Have you tried these vegetable spring rolls yet? 🥬 This recipe is very easy to make and you can use any leftover vegetables from the kitchen. I made mine with cabbage, carrots and eggplant. 🥢 Recipe here:
* 1 tablespoon oil
* 2 tbsp spring onions
* 1 clove of garlic
* 1 cup of shredded eggplant
* 1 cup of shredded cabbage
* 1 cup of shredded carrot
* 1 small spring onion, chopped
* 1/2 tablespoon salt + pepper
Finely chop all the vegetables and cook on a warm pan. Use 3-4 round flour wrappers (I like the thick ones you can buy), add them into a bowl of water. Place the filling, wrap and cook in oil for frying. 
Serve the vegetable rolls with your own dip or sweet chili sauce for dipping.

10 minute vegan pasta recipe 🌱🍝 Today’s Inspiration for a healthy and simple everyday meal and something I’ve been living off lately. Ive shared this simple pasta recipe right here:
* 100g pasta
* 100g fresh cabbage
* handful of tomatoes
* half onion (small)
* 1 teaspoon of cumin
* half cup of cream (vegan)
* salt & pepper
Cook the fresh pasta in 3-4 minutes in a saucepan. Chop the cabbage and add the last 2 minutes. Add the soy cream, cumin, tomatoes, drizzle with salt and pepper. Stir it all together and serve with fresh parsley on top.

I can admit, I stress very easily. It’s one of my biggest downfalls that I’m consistently working on getting better at managing. Things aren’t always going to be perfect & life isn’t going to end when things get tough (although it definitely feels that way at times 😂). It’s like I have to drill it in my brain that things could always be so much worse & that with every bad day, comes three more good. Currently en route to the car shop, to walk 3 miles back home (after my 4 1/2 mile trek for coffee this morning. Desperate or dedicated? 🤔) so I’m counting that as my movement for the day! And fresh air always does some good on a stressed mind! Happy Friday everyone! Hope you all have amazing weekends!

That’s where these bad boys came in! I drove home over the weekend & made sure to stop at my favorite vegan spot. They have these peanut butter bars that are LITERALLY addicting & I knew, because I’m no longer around them (devastated), that I needed to re create my own version. I was shocked how identical these ended up tasting. The best part? They take 5 minutes, are no bake, & just three ingredients. The worst part? They don’t last more than a day 😂 they’re an amazing thing to prep for the week as well, for breakfast, snack, or even a little after-dinner treat. You can also add in dried fruit, nuts, cinnamon, etc. to make them even more fun! Don’t do oats!? Just sub in chopped nuts & they’re just as amazing!
