17 Meal prep servings , 11 separate dishes, 7 meals, 2 children, lots of tablespoons and it’s done! ➡️ This will be the last meal prep inspiration for 2018 and what an awesome meal prep year it has been 🙌 ___________________ Monday : Boiling and straining oil dhal took up most of my day !! I prepare my oil dhal, soak it, boil it till it’s cooked, cool, liquidize , strain through a sieve and divide in containers and freeze. This makes meal prepping so much easier on the day. ____________________ Tuesday: Lunch : Mugh and sausages with fresh roti Supper: Meat free- Khuri Kitchri . Spicy yoghurt curry with yellow lentil rice served with with caramelized cinnamon butternut curry, cooked eggplant salad, potato fry, fresh mango atchaar (if you seen my Instagram stories you be having a grin on your face right now). What better way to celebrate fresh atchaar then with this meat free dish. ____________________ Wednesday: Steak Chop Soey. I cut and washed my cabbage, grated my carrots and cut my peppers ready for the stir-fry. I tend to buy the ready packed coleslaw mix, but It may not have lasted. I also fried my egg noodles so there is no oily mess on the day. _________________ Thursday: Chicken curry with green beans, carrots and soft potatoes. Served with roti (I made it today and will warm in the oven in Thursday). Having everything ready makes meal prep a breeze. _____________________ Friday: Granny / mother-in-law / husbands mum (if you seen insta stories then you know 🤣🤣) prepares lunch and supper. If we are not eating supper together I got hotdogs as a backup _____________________ Saturday: Hoping for that braai but not sure if it’s going to happen. The weather app has not been good to us 🤣. If not then chips parcel with atchaar- possibly🤣 _____________________ Sunday: Eggfried rice with butter chicken. Butter chicken has been prepared and will be warmed on Sunday. The rice will be cooked fresh. ______________ The chicken dhal has been prepared for when we get back from holiday. SPICY VEGAN ‘BEETZA’ 🍕. It is safe to say i am obsessed with the new @warburtonsgf #glutenfree Beetroot Wraps. I decided to create this recipe based on #lowcarb tortilla wrap #recipes i created yearrrrrs ago- scroll down about 600 pictures to find them! These are really tasty, look great on the plate and carry all the corculation boosting benefits of beetroot in a nice cheesy, crispy format. RECIPE: Spread a thin layer of tomato passata onto the beetroot wrap (OR, if you love 🌶 food like me, swap this for Nandos sauce- TRUST ME) then add a handful of rocket, a nice layer of #vegan coconut ‘cheddar’ cheese and some par boiled asparagus spears (which turn nice and crispy when baked atop the pizza).
