Mealprepped 3 lunches last night! One of these will be decimated today😋 We have: fried rice w/ mixed grain and bean rice, carrots, peas, cucumber, broccoli stalk, and veg chickn, plus simply stir-fried salt and pepper broccoli, boiled beets, an egg, and avo dressed w/ sesame oil and salt.

fudgy chocolate sea salt cookies // grain & gluten free, refined sugar free, dairy free, & delicious 😋
1 c. almond flour
1/4 c. cacao powder
2 tbsp coconut sugar
1/2 tsp baking soda
1/2 tsp vanilla bean powder
1/4 tsp sea salt
1 egg @vitalfarms
2 tbsp almond butter
2 tbsp coconut oil
2 tbsp almond milk
3 tbsp chocolate, chopped (or chocolate chips) i used @loving_earth creamy chocolate
preheat oven to 350°. line baking sheet with parchment paper. combine dry ingredients in bowl & wet ingredients in another bowl. incorporate wet ingredients into dry, stirring until fully combined. fold in chocolate chunks. form into 1 inch balls, flattening slightly with hands. bake for 12 min and sprinkle with additional sea salt. let cool (if you can!)

hope everyone had a great weekend!! mine was perfect - i caught up with some friends, did 100 errands, and ended it with a 90 minute deep stretch yoga class that chilled me the f out 💆🏻♀️ this was yesterday’s breakfast cause this morning i had to get up before 5 to catch my flight ✈️ it was a high stress morning because i forgot to schedule an uber ride and got to the gate 1 minute before boarding 🙃 #adrenalinejunkie#livefastdieyoung

canned veggies and other canned foods tend to get a bad rap. many people think they're not as healthy as fresh produce, but that's not true at all! the food is often canned and preserved within hours of picking, and the food is just as tasty when prepared correctly!
plus canned goods are inexpensive and super duper convenient. i literally use canned diced green chiles, chipotle peppers, tomatoes and some type of canned beans at least once a week! 🌽🌶🍅 anyone else?! 🙋🏻♀️
today over on the blog, i'm showing you how to transform a humble can of corn and a can of black beans into a delicious and flavorful BLACK BEAN AND CORN SALSA. here's what you need:
◾️canned corn and canned black beans (1 15-oz can each)
◾️roma/plum tomatoes (4 medium)
◾️red onion (1/2 medium)
◾️cilantro (1/2 cup)
◾️lime juice (1 1/2 limes)
◾️olive oil (1 tbsp)
◾️honey (2 tsp)
◾️ground cumin and coarse kosher salt (1 tsp each)
◾️black pepper (1/4 tsp)
to keep everything tasting as fresh and bright as possible, i mixed all the veggies and beans with a simple dressing of olive oil, honey, lime juice, cilantro and a few other spices and seasonings. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
for the best salsa, i recommend letting the it sit in the fridge for an hour or two to help the flavors and juices really meld together and soak into the corn and beans. then serve it up with some tortilla chips, in burrito bowl or on tacos and enjoy! ⠀⠀⠀⠀⠀⠀⠀⠀⠀
