🍄🥣Mushroom soup! Like the lentil soup I posted last week, this is more technique than an exact recipe. Use a mix of mushrooms or just one. Shiitake, cremini, oyster, porcini or regular old button mushrooms all make for delicious soup....
Sauté one diced onion (or the white part of a leek, cleaned and chopped) in 4 Tbs butter or olive oil (use more if you’re feeling indulgent - there are certainly recipes that use a whole stick of butter) with a few cloves grated garlic, a Tbs minced fresh thyme and salt and pepper. Sauté until onions get a little golden on the edges, 5-10 minutes (check out my stories for a visual.) Add about 8 cups cleaned and sliced mushrooms. For this soup I used a pound of cremini, and 8 oz of shiitake. Sauté 15-20 minutes, stirring every so often. Deglaze with a good splash (1/4 - 1/3 cup) white wine, sherry or mirin. Stir to scrape any brown bits at the bottom of the pan. Lots of flavor there!! Once wine is mostly evaporated, add 4 cups chicken or veg stock.  Bring to a simmer and cook another 20 minutes. Purée to desired consistency. Usually I like mine a little chunky but super smooth is also nice. Finish with cream or half n half if desired (I’m a fan) and a drizzle of olive oil. If I’m being fancy I’ll garnish with a few mushrooms sautéed in olive oil and seasoned with salt and pepper. A simpler (and totally delicious) garnish is a round of toasted baguette rubbed with olive oil! 🤤🍄🥣 Tag me if you make it!!
Happy Friday☀️I’ve been trying to make an effort to have more plant-based meals with three of my closest friends being vegan so shout out to @chris24michel , @frizzybri, and @daniellecole_ for having an impact on me. 😉 Last night, I tried @TraderJoes yellow lentil and brown rice pasta (GF) and it was so good! 🍝 I made the pasta sauce using forager’s cashewgurt, tomato paste, turmeric, yellow onion, paprika, chili powder, ground cumin, lemon juice, and water. 🥘 For my protein source, I baked tofu tossed in hot sauce and put it in the oven for about 30 minutes. I also put some baby bella mushrooms and grape tomatoes in a sauce pan with ½ tbsp olive oil and added some of @TraderJoes chile lime seasoning and let it simmer while the pasta was cooking in hot water. Once the pasta sauce started simmering, I added the pasta, tofu, and vegetables and added a bit more seasoning for taste. 😋

💙 quick oats
💙 ground flax
💙 sacha inchi protein
💙 frozen blueberries & raspberries

Toppings:

Yes you can spiralize parsnips!! I use my Paderno Spiralizer (hand held ones don’t typical work well for root veggies) and then I just sauté it in the pan for about 6-7 min in olive oil!

As much as I enjoy traveling and time away, each time I come home I am more appreciative of my routine (which before going away felt mundane). I am grateful for the simple things – driving in my car, sleeping in my own bed, clean tap water, homemade meals + knowing what I’m eating, kombucha, snuggling with my pups, showering in my own home, pooping in my own toilet (more regularly -- 💩 issues while away 🙈), and of course waking up and enjoying a slow morning of my regular routine: lemon water, meditation + matcha.

Chickpea Cookie Dough is without a doubt my most well loved recipe (for a good reason) and I’m honestly mind blown that with these chocolate covered cookie dough bites it only got better 🤯 whipped up a batch of the cookie dough (recipe below or on the blog!) and formed the cookie dough into bite sizes and gave them a nice little dunk in some melted chocolate, sprinkled some sea salt, popped them in the freezer & then sat in denial at how unreal these are! 🤤 hope you all have a great day (and if you want to make it even better, you know what to do ☝️)!! | Here’s the recipe 
Ingredients: 
1 can chickpeas
2 tbsp maple syrup 
1/3 c. peanut butter 
1 tsp vanilla 
1/4 c. chocolate chips (save out of food processor until end) 
Pinch of sea salt
DIRECTIONS:
1. Strain and rinse the can of chickpeas. For smoother consistency cookie dough, remove the skin of the chickpea) 
2. Combine all ingredients (except chocolate chips) into a food processor
3. Blend until smooth
4. Add in chocolate chips
5. Place into sealable container and store in fridge ✨ #thehealthyhaff
| FUDGY BROWNIE MUFFINS | yesterday after lunch, i wanted chocolate. but not just any chocolate. i really, really wanted a brownie. of course i didn't have any at the ready, but fortunately i did just receive in the mail @donna.hay 's #modernbaking cookbook. i had ordered it early on in february so I could take part in @rainydaybites #rainydaybitescookbookclub , but for whatever reason it took nearly three weeks to arrive! i missed the first official cookbook club challenge (salted maple sticky buns) for not having the book, and will not be able to take part in the second (vanilla brûlée cheesecake) since i don't have a kitchen blow torch. but not to worry: from the looks of things (and if these fudgy cupcakes of goodness with little melty chocolate pools throughout are any indication), i will be baking my way cover-to-cover through this tome. and: it's absolutely beautiful to boot. happy chocolate friday to all, and thank you, deborah, for turning me on to donna's fabulous new book!

Давно хотела продублировать свой старый, очень любимый рецепт.

На 1 человека (потому что муж в бане, а дети не едят креветки 😀):
✔️7 королевских креветок (сырых)
✔️2 крупных шампиньона
✔️Кусочек свежего имбиря
✔️1-2 зубчика чеснока
✔️1/2 банки кокосовых сливок
✔️Лимонная цедра
✔️Сок лимона

Разогреть оливковое масло и  быстро обжарить измельченные чеснок и имбирь. Потушить несколько минут и добавить мелконарубленные шампиньоны.  Потушить вместе, залить кокосовыми сливками, посолить, добавить цедру, соль, сок лимона, попробовать.

Креветки очистить, выложить на сковороду. 1 минута на каждой стороне и выключаем. Перемешать, накрыть крышкой на 1 минуту.

Раньше в этом рецепте была 1/4 банки кокосового молока, но постепенно я пришла в половине ))) самый огонь 🔥🔥 добавить в это довольно густое, но жидкое блюдо - острые листики нори (бывают с острым перцем, с васаби). Это неидеальный ингредиент для АИП, но в нежной кокосовой похлёбке будет просто взрыв.

Но и просто добавить мелко нарезанных нори сюда будет очень уместно.

Зима на исходе, скоро густое и горячее будет уже не актуально 😉 так что не тормозим 😁

Кстати, креветки - мой личный фаворит для тех случаев, когда грустно, ничто не радует и хочется сорваться. Я мега эмоциональный едок 🙈 кто такой же? Как справляетесь?
