I call this "Leigh's wardrobe project" 🔥🔥🔥 turned our fitted wardrobes in the bedroom from 1970s crappy pine into sleek grey lushness with big bold copper knobs (🤭🤭🤭 I said knobs). The whole transformation cost less than £25 for paint and handles from @bandq_uk ✌️ the cost in labour hours? Priceless 😉😉😉

Get yer best bra out it’s FRIDAY! Since I have limited weekends left in bonnie Scotland before adventuring to the land of bears and maple syrup, @kkland and I are off to a wee loft in Blairgowrie. This time last year I thought I was “half-way there” - oh boy, if only I knew then how much further I would want to go after I got “there” (whatever that meant back then). Still think teaming up with @fitness_made_easy was one of the best decisions I’ve ever made, despite some people questioning if he has my best interest in mind. But I can assure you - if anything he is going to tell me to have that slice of cake or get the burger that I’ve been craving, cause that’s live. 
Not quite sure where I’m going with this but all I can say is that I‘m enjoying the journey with all its ups and downs! The past couple of weeks haven’t been easy but I’m determined to finish strong! 🙌🏻
I am slowly learning that the people who I choose to keep in my world are more significant than the people who were forced into my world by circumstances and genetics. I should not be expected to be loyal to family members I did not pick. Why are we supposed to be loyal to family, no matter what they do to you, no matter how they treat you? Why are we not allowed to speak up to our older relatives when they disrespect you, but they’re allowed to do anything without consequence? Why does society condition us to believe you’re supposed to stay loyal to family (who were given to you, not chosen by you) but encourages us to leave any other toxic situation, whether it’s a toxic relationship or friendship? ⭐️

Chilli Flakes are one of the quickest and easiest ways to pep up even the simplest of dishes. They’re essential to Indian cooking, adding all-important flavour and heat. Fragrant Laksa squash soup is the perfect flavour combination of tang, salt, and spice. Sweet and tender butternut squash works to cut through the heat, adding some extra goodness. If you don’t have the ingredients for a homemade Laksa paste, our Red Curry Paste is a great alternative.
Ingredients (Serves 2):
- 25g butternut squash, de-seeded and sliced into thick slices
- 1 tsp soy sauce
- 1 tsp vegetable oil
- 2 large shallots, finely chopped
- ¼ red chilli (seeds removed if you don’t want too much heat)
- 2 large tbsp Mae Ploy Red Curry Paste
- 600ml stock (either vegetable or chicken)
- 175ml reduced-fat coconut milk
- 25g dried rice noodles
- 55g fresh bean sprouts
- 1 small handful of pea shoots
- 1 small bunch chopped fresh coriander
- Squeeze of lime 
1. Preheat your oven to 200°C. Chop your squash into thick slices and place it on a lightly oiled tray, skin side down. Brush the inside with soy sauce and roast for 25-30 minutes or until soft and slightly charred. 
2. Heat oil in a medium saucepan, add shallots and fry for 5-7 minutes until golden brown. Add sliced chilli and cook for one more minute. Add our Red Curry Paste and continue stirring for one more minute.
3. Dissolve the stock cube in a large jug in 700ml boiling water, then pour into the pan and stir to combine. Pour in the coconut milk and bring to the boil.
4. Whilst this is cooking, pour boiling water over the noodles and leave for 10 minutes then drain well. 
5. Remove your butternut squash from the oven, peel off the outside skin and chop into rough chunks.
6. Add the coconut milk to the soup, with the squash, noodles, bean sprouts, a squeeze of lime, and coriander. Simmer very gently for a further 5 minutes. 
7. Garnish with pea shoots and for an added kick, top with extra chilli.
Used frequently in North India, the warm and sweet flavour of cloves work well in many dishes, from garam masala mixes and rich and spicy curries to sweet dishes and masala chai tea. In Ayurvedic medicine, cloves are also believed to help improve digestion and reduce inflammation.

Although identical by name and similar by eye, Indian bay leaves have a very different taste to European bay leaves. With a flavour similar to cloves, they work well in dishes like biryanis and kormas. Try adding them to slow-cooking dishes to allow them to fully release their flavour!

Curry Powder is an aromatic blend of many of the commonly used spices in Indian cooking, including turmeric, chilli powder, ground coriander, and cumin. Although not typically used for making traditional Indian dishes, it’s a great ingredient to add for those special and distinctive flavours of the Indian cuisine.

A cheeky Snog to start the week.
Originating in South India, the Masala Dosa is a fermented crepe made from rice batter and black lentils, filled with spicy potato filling and a colourful chutney. Dosas are a common breakfast option throughout much of India, similar to a savoury pancake!
