I love Saturdays. I love banana bread. I love blueberries. I love white chocolate. It was only a matter of time until I combined them into the most delicious banana bread for your Saturday morning.

Wet ingredients:
3 ripe bananas
2 eggs
1 tbs vanilla extract
3 tbs maple syrup 
Dry ingredients:
1 cup almond flour (I use @bobsredmill )
1/4 cup coconut flour
1 heaped tsp baking powder
1/2 tsp salt
2 tsp cinnamon
1 cup frozen blueberries, I reserved a few for the top.

White chocolate (not something you should ever measure)

Preheat oven to 350F. Using a hand mixer, combine the wet ingredients until incorporated. In a separate bowl, add the dry ingredients, except the blueberries. Slowly add the dry to the wet until well combined. Toss in your blueberries. Pour batter into a prepared bread pan and top with reserved blueberries and white chocolate. I also added a few dashes of cinnamon on top. Bake 30-35 minutes or until a toothpick comes out clean. 
Best served warm when the chocolate is all gooey and yeah…its amazing. Happy Saturday everyone! I’ve got three exams this upcoming week so I’m going to try to knock out some studying today. But first, off to the gym! What are y’all up to!?

Today I made a new blueberry spinach smoothie. Blueberries is one of my favorite berries and yesterday they were on sale, and when there is a discount you can be 100% sure that I'll grab a few boxes😁 The recipe for this colorful smoothie is down below.
How do you like to spend a rainy day? ▪️
Blueberry spinach smoothie
Smoothie base 
1/2 cup frozen blueberries
1 banana
2 big handfuls spinach
1/2 handful frozen peas
1 cup water/milk or to your preference. I used almond milk.

1/4 cup soy yogurt
1/4-1/2 cup of your favorite granola or oats
A few banana slices
A few berries

Add spinach and 1/2 cup water/milk in a blender and blend until smooth. Add in the rest of the smoothie ingredients, a splash of water and blend until your preferred consistency. Add in more water if needed. Pour the smoothie in a bowl and top it with all the yummy toppings you can find in your kitchen cabinets. Snap a picture so I can see your yummy bowl😍, find a comfy place to sit and enjoy!

childhood mornings were filled with breakfasts! my mom would make pancakes or waffles or eggs and we would always have eggos in the freezer for easier weekdays. some things just remind you of being a kid. which is why i had to make an easy peasy COPYCAT EGGO WAFFLE recipe to whip up in minutes. voíla!
1c almond flour
pinch of @primalpalate salt
1tsp baking soda
4 eggs
1tbsp maple syrup
1tsp vanilla extract
preheat waffle iron & spray it. mix dry ingredients, then separately mix wet. combine dry & wet then cook 👌🏽

This is one of my favorite post-workout meals 😍 I’ve got my healthy protein, fats, & carbs!👊🏼 And this is the perfect meal prep meal because you can just roast all your veggies in one day & then throw them together in a salad whenever 🙌🏼 Super effortless & just what you need after a grueling workout 🏋🏽‍♀️
▫️Roasted Cauliflower & Sweet Potato (seasoned with EVOO, Turmeric, Smoked Paprika, Cumin, S&P)
▫️Roasted Brussels Sprouts (seasoning with Honey & Balsamic Vinaigrette)
▫️1/2 Avocado, sliced
▫️1 Sunny-Side Up Egg (@vitalfarms)
▫️Spicy Sriracha Protein Chips (@iwonorganics)
▫️Baby Spinach
Preheat oven to 425°.
Prep all your veggies. Cut the cauliflower from the stems, half the Brussels sprouts, & chop your sweet potato. Then mix in the seasonings & roast in the oven for 15-20 mins.
👉🏼 Salad bowl put together with a bed of baby spinach topped roasted veggies, an egg, sliced avocado, & protein chips (sooo tasty btw & made from peas!!). Seasoned with some EVOO, Everything Bagel Seasoning, S&P.
🥥 Chocho & Coconut Bliss Balls
⏲ Under 10 mins | Yields 15 Mini-Balls
Have you heard of Chocho!? If not, you are missing out! Chocho Protein Powder is a clean, nutrient dense protein source & SUCH an amazing addition to any recipe 🤩 Chocho Powder has a lot more benefits that Almond, Coconut, & Chickpea Flour. 😱 I could snack on these Bliss Babies all day!!
▫️1/2 cup Dates (@wholefoods)
▫️1/4 cup Almonds (or your choice of nuts)
▫️1/4 cup Cacao Nibs
▫️1/2 cup Shredded Toasted Coconut
▫️1 tbsp Chocho Powder (@fivesunsfoods)
Start off by blending your dates & almonds in a food processor until evenly chopped. Then add in your cacao nibs, coconut (save some for rolling), & Chocho Powder.
Then, use a tbsp measurer to scoop out the batter & roll into small balls. Then roll into your leftover toasted coconut.
Store in an airtight container in the fridge. They won’t be there for long! 🤤
🥮 Tahini Cauliflower Steaks
⏲ Under 30 mins | Serves 2
Nothing better than some roasted cauliflower steaks 🤤 Add it to a salad, some mashed potatoes, or enjoy just by itself because it’s just THAT good 🤩 ⠀⠀⠀⠀⠀⠀⠀⠀⠀
▫️1 head of Cauliflower
▫️3 tbsp Tahini
▫️2 cloves Garlic, minced
▫️2 tbsp Olive Oil
▫️Seasonings - Salt, Smoked Paprika, & Turmeric
Preheat oven to 450°.
Start off by prepping your cauliflower & cutting them into 4 steaks (sometimes it doesn’t work out & you only get 2-3 intact steaks, nothing wrong with that!). Then in a small bowl, add in the remaining ingredients. Use a brush to coat each side of your steaks with the tahini mixture. Lay on a baking sheet & roast in the oven for 20 mins.

🍓 Oatmeal w/ Raspberry Chia Jelly

What’s in my bowl 🥣👇🏼
▫️1/2 cup Quick Oats (@bobsredmill)
▫️1 cup Unsweetened Almond Milk (@silk)
▫️1 tsp Light Brown Sugar
▫️1/2 tbsp Maple Syrup
Combine all ingredients together in a microwave safe dish. Microwave for 1 1/2 mins - 2 mins.
Top with raw almond butter (@maranathanutbutters), Raspberry Chia Jam (recipe in heart toasts & story highlights), sliced almonds (@natureseats), cacao nibs, & hemp seeds (@manitobaharvest)👌🏼
♥️ Gooey Sweet Potato Skillet Brownie

Happy #ValentinesDay to you all! 🥰 Hope you are spending the day with your friends, family, significant other, or some self-love 💕 I will be spending it enjoying this DELICIOUS Sweet Potato Brownie 😍 Like DANG y’all...this is the gooiest brownie I have ever had & I am lovin’ every bite of it 🤩
Wet Ingredients:
▫️3/4 Medium Sweet Potato
▫️1 Pastured Brown Egg (@vitalfarms)
▫️1 tsp Vanilla Extract
▫️1 tbsp Honey
▫️1 tbsp Coconut Oil (@vitacoco)
▫️1/4 cup Almond Butter (@maranathanutbutters)
Dry Ingredients:
▫️1/4 cup Cocoa Powder (@hersheys)
▫️1/2 tsp Baking Soda
▫️1 tbsp Almond Flour (@natureseats)
▫️Pinch of Salt
▫️Semi-Sweet Mini Chocolate Chips (@enjoylifefoods)
▫️1/4 Medium Sweet Potato
▫️1 cup Powdered Sugar
▫️1/4 Cocoa Powder
▫️1/2 tsp Vanilla Extract
▫️3-4 drops Red Food Coloring
Preheat oven to 425°. Add your whole medium sized sweet potato (I like to cut it in half so it’s easier to cook evenly). Roast in the oven for 45 mins.
Once the SP is ready, cut 3/4 of it (saving the other 1/4 for the icing). Add to a blender, along with all the other wet ingredients. Blend until there are no lumps (this just helps to easily purée the SP rather than mashing it yourself).
Lower the oven to 350°.
In a bowl, evenly mix together all your dry ingredients except the chocolate chips. Then mix in the wet ingredients. Lastly, add in as many chocolate chips as you’d like.
The batter is now ready! Pour into a 6.5” skillet (or any baking dish) & spread evenly.
Cook in the oven for 20-25 mins. This will allow the center to be super moist & gooey 🤤
While that’s cooking, blend all your ingredients for the icing in your blender. Add to a piping bag so it’s ready to go!
Once the brownie has cooked, allow it to cool for 15 mins before icing it.
I made a heart shape with the icing & sprinkled on some freeze dried raspberries for a pop of color ♥️
Enjoy with some vanilla bean ice cream & eat straight from the skillet! 😋

🌮 Sweet Potato Breakfast Tacos

It’s #TacoTuesday!! So I thought I’d spread the love by sharing these delicious breakfast tacos I made 😍 Probably one of my faves & so easy to make 👌🏼 Mouth is watering just from looking at them! 🤤
Taco Deets👇🏼
▫️2 Cassava & Chia Tortillas (@sietefoods)
▫️1/2 small Sweet Potato, cubed
▫️2 Sunny-Side Up Eggs (@vitalfarms)
▫️Handful of Spinach
▫️1 Small Avocado, sliced
▫️Seasonings - Chili Powder, Smoked Paprika, Cumin, Garlic, Salt & Pepper
In a pan, sauté your cubes sweet potato in some olive oil. After 1-2 mins, add in your seasonings. Cook on low-medium heat for 8-10 mins. Cover to allow the steam to soften the sweet potatoes. Set aside once cooked.
In the same pan, crack in two eggs & cook until eggs whites have set.
Then heat up your tortillas for about a min on each side.
👉🏼 Build your TACO! Tortilla with an egg, layer of spinach, sweet potatoes, & avocado on the side. Top everything off Everything Bagel Seasoning (@wholefoods) & some Habanero Hot Sauce (@sietefoods) 🔥
🥯 Homemade Bagels
⏲ 15 mins Prep Time | Serves 4
Homemade bagels for the win 🙌🏼 I have been enjoying these bagels since I made them & they’re the perfect breakfast 🤤 Happy Monday!! 🙃
▫️1 cup Whole Wheat Flour (@bobsredmill)
▫️2 tsp Baking Powder
▫️1/2 tsp Baking Soda
▫️Pinch of Salt
▫️1 cup Plain Greek Yogurt (@siggisdairy)
▫️Egg Wash (egg white or beaten whole egg)
▫️Everything Bagel Seasoning (@wholefoods)
Preheat the oven to 375°.
In a mixing bowl, add in your flour, baking powder, baking soda, & salt. Whisk together until evenly combined. Then add in your Greek Yogurt & mix. The dough should be crumbly.
On a clean surface, lay down some more flour & pour out your dough. Using your hands, start to knead the dough a few times. You want the dough to be tacky but not sticking to your hands. Continue to knead & add flour to the surface as you go.
Once the dough is ready, shape into a ball & cut into 4 even parts. Roll out each into a thin cylinder & connect to form a ring. Add to a parchment lined baking dish.
After all 4 bagel rings are complete, use a brush to coat the tops with the egg wash. Then sprinkle on your everything bagel seasoning (the more, the better 🤪).
Now they are ready to bake! Bake in the oven for roughly 25 mins. The tops should be a nice golden brown. Then let them sit for a few minutes to cool before slicing them in half.
👉🏼 Slice your bagel in half & lather on some vegan cream cheese (@daiyafoods) 🤤
