Looking for a quick weeknight dinner inspiration! This sweet and spicy cauliflower fried rice comes together in no time. We made a sauce using our red pepper jelly, soy sauce, ginger and garlic. It tastes so so good. Do you like sweet and spicy!!
Pesto, Pine Nut, and Fresh Pea salad and would you believe this is made with chickpea rice? ! I easily swapped out my usual orzo and it worked perfectly using @banza chickpea rice, and since the texture is so similar to orzo, I'm loving it! My basil plants are going crazy right now, so I made a big batch of pesto, added @traderjoes fresh english peas and topped with some toasted pine nuts. Easy pea-sy 😋. I love all the extra protein, fiber, and it is gluten free. A super healthy salad, great for picnics too.Thank you @banza for sending me such a fun package. Happy Thursday!
Chickpea Rice with Pesto, Fresh Peas, and Pine Nuts
1 8 oz package @banza rice, cooked according to package directions (can also use orzo)
1/2 cup fresh peas, cooked in boiling water for one minute, then cooled in ice water (thawed frozen peas also work)
1/4 - 1/2 cup toasted pine nuts
Grated parmesan to sprinkle on top
For the Basil Pesto:
(makes 1 cup, can be doubled)
1 1/2 cup fresh basil leaves, packed
1/2 cup fresh baby spinach, packed (or use all basil)
1/3 cup pine nuts, lightly toasted
1 small garlic clove, minced
1/2 cup grated Parmesan
1/2 cup extra-virgin olive oil
Salt and fresh ground pepper to taste
Place basil, spinach, pine nuts, garlic, and cheese in bowl of food
processor and pulse a few times until roughly chopped. slowly add
olive oil and process until smooth.
Combine the cooked rice, pine nuts, and peas in a large bowl. Add desired amount of pesto (I added about 1/2 cup). Mix to combine. Add salt and pepper to taste. Top with additional parmesan if desired.

Browned Butter Basil Spaghetti Squash with Mom’s Meatballs is ON THE BLOG this morning!
Taking buttered noodles to a whole new level right here folks!

Today I made Cantonese style noodles for dinner. We bought the crunchy noodles and vegetables from the local hk market. Stir fried the noodles and the vegetables. The noodles were delicious with the perfect amount of crunch. .
