PERSIAN SHIRAZI SALAD
This easy and diverse salad will become a staple salad at your house!
* 2 medium tomatoes
* 3 cucumbers
* ½ medium white onion
* 1 cup finely chopped parsley
* 1 cup finely chopped mint
* 3 tablespoons olive oil
* 3 tablespoons lemon juice
* ½ teaspoon salt
* ½ teaspoon black pepper
1. Deseed the tomatoes and chop them into bite size cubes. Dice the cucumbers as well.
2. Finely chop the white onion and set aside.
3. Mix the lemon juice, olive oil, salt and black pepper together and give a quick whisk.
4. Toss all ingredients together and serve fresh.

An EMOM of heavy-ish singles—my fave. These felt lighter than ever, and thank goodness for that; the long burner that is 19.1 would be (even more) brutal with any lingering soreness.
I kinda love that the last few years of the #crossfitopen have started with long, low-skill, lightweight meat grinder workouts. The kind you can power through if you’re willing to be uncomfortable. I’m stoked to see how hard I can push it this afternoon.
