Dreaming of this paleo, vegetarian, gluten free cauliflower risotto.✨💯✨ You can buy or make cauliflower rice, pan fry with coconut oil, s&p, and lots of garlic and whatever veggies you’d like. I added chopped green beans. Top with parmesan (or make it vegan and skip the cheese and use nutritional yeast instead). Also top with arugula for more green goodness. 🌱💚

Sheet-pan dinners are a mid-week savior. I am solo parenting this week and was out of the house from 8-5 yesterday and my parents were coming for dinner. So instead of relying on takeout 🥡 I added this super-easy (and next to no clean up 🧼) dinner to our #mealplan . .
We were all sitting down to dinner at 6 while Ashley recounted every last detail of our California trip to Nana and Papa. .
Sheet Pan Shrimp 🍤 Scampi - 1.5 lbs it peeled and deveined Mayport shrimp 🦐 - 2 TBSPs white wine
- 1 TBSP olive oil (or melted butter)
- 1 TBSP coconut aminos
- 1 clove of garlic; grated
- 1 shallot; grated
- zest of 1 🍋 - pinch of red pepper flakes (optional)
- salt and pepper
Whisk together the marinade and allow shrimp to sit in the mixture for 10 minutes while the oven heats to 400. .
Put shrimp on a parchment or foil lined sheet pan and cook for 10-12 minutes until pink and cooked through (flipping once).
I added in another tray of asparagus tossed in EVOO and S&P which cooked for the same time. .
I served it over buttered zoodles for the adults and rice for the kids all topped with a hefty sprinkle of chopped parsley and a squeeze of lemon juice. .

I’m back in NJ with my fam this weekend and am loving being all sNUGGled up in the cooler temps 🌬💕 Best of all, it’s almost the weekend and I’m always looking for fun ideas to cook up when I have the time! You need to try my spin on ALMOND FLOUR CHICKEN NUGGETS 🍗👏🏼 This recipe takes under 20 minutes to prep and under 1 hour to prepare start to finish! Plus, who doesn’t love a healthier spin on this childhood favorite?! 🎉
Cut chicken breasts or tenders into nugget sized pieces. In one bowl, scramble 1-2 eggs. In a second bowl, combine 3/4 cup almond flour, salt, pepper, 1 tsp garlic powder, 1 tsp thyme, 1 tsp paprika and 1 tsp parsley (you can add more/less of each spice depending on what flavors you like!) Coat each nugget in the egg and shake off excess, then transfer to the almond flour mixture to coat it again. Lay the breaded nuggets on a baking sheet lined with parchment paper, and spread them out so they aren’t touching. Bake for 15-20 minutes at 425 degrees, or until chicken reaches 165 degrees! Serve with your favorite dipping sauce and enjoy! 😜😜

Just a little about Me.... I live in California. This year we have been having some really cold weather, even snow in some areas, like the Grapevine, pretty cool.. areas that have never had snow. This kind of weather effects my health at times when I have a flare up. Haven't been feeling well for the past week and been having overwhelming pain. I have not felt like this in such a long time, years. I am staying strong and focusing on the rest of my health, just have to take it one day at a time. Therefore I believe today is going to be a great day! Going car shopping with my hubby who took a day off of work, followed by being around great friends. I am hoping to get back to playing in the kitchen soon, because I really enjoy baking. I have a couple of ideas running in my head for some great desserts. So stick around. Have a Wonderful weekend!
