TGIF!!! I’ve been pretty hard on myself this week, which has been stalling my progress and productivity. It is so much better for me to just accept my slip ups and move on with it! There is NO use in dwelling on the way things could have been. We can only keep moving forward. .

Tuna Noodle Casserole- Veggie Style- Serves 6. Packed with #fibre, #protein and #halfyourplate of vegetables… this is the perfect fuel to pack for lunch! Not to mention that cheese 🧀🥰
Ingredients:
*3-4 medium zucchini, spiralized into noodles
*2 teaspoons olive oil
*1/2 large yellow onion, diced
*2 (6 ounce) cans water-packed flaked tuna, drained
*1 tbsp tomato paste
*1 (15 ounce) can diced tomatoes, drained
*1/2 cup  milk of your choice
*1 tsp dried rosemary
*3 tbsp of Greek Yogurt
*1 cup of canned chickpeas (I use the 3 bean trio)
*1/2 cup shredded cheddar cheese

Directions:
1. Preheat oven to 400 degrees, spray a 9 x 13 inch pan with nonstick spray. Spread the spiralized zucchini in an even layer in the casserole dish. Set aside.
2. In a large skillet, heat the oil, Once hot, add the onion and cook until soft, about 2 minutes. Add the tuna and tomato paste, cook for about 1 more minute. Stir in the diced tomatoes, milk, and rosemary. Bring to a simmer and stir in the Greek Yogurt and chickpeas. 
3. Pour the tuna mix over the zucchini noodles. Sprinkle with cheddar cheese on top. Bake, uncovered, for 15 minutes or until cheese is melted and bubbly.

This week I have been trying out some Chia Seed puddings for breakfast and I can say that they are amazing! 🍓⁣

50g Chia seeds ⁣
250ml non dairy milk ⁣
100g strawberries or blueberries ⁣
⁣
Mix the chia seeds with the milk and leave for an hour, go back and give a good stir then put into a glass and leave overnight in the fridge. (You may need to add a drop more milk) top with fruit of your choice.⁣

Let me spill some tea real quick. As a personal trainer, I feel like it's my responsibility to let you know that I didn't start the #arbonne30daystohealthyliving challenge to lose weight or inches. I'm obviously pretty active and am a big advocate for being happy in your own skin, while also maintaining a relatively healthy lifestyle. I started the challenge because I needed a way to cut the nasty, processed, sugar filled foods.

I've always had an interesting relationship with food - anywhere from an eating disorder when I was a teenager to eating a bowl of cereal every single night before bed (whether I was hungry or not). It took the guesswork and excuses out of it and broke it down in a very realistic way. 1 and 1/2 cups coconut milk⁣
1 ripe avocado⁣
1 small banana⁣
1 cup packed spinach⁣

1/2 teaspoon ground cardamom⁣

🌟 Recipe⁣
Add 1 cup of the pistachios plus the rest of the ingredients to a blender and blend until smooth⁣
Pour the mixture into a 5″x 7″ parchment paper-lined container or loaf pan and freeze overnight⁣
