Boiled Beetroot Salad. This is a beauty. Just look at it! 😍 Beetroot has a woody flavour, this recipe uses fresh garlic, parsley and mint to bring it to life. I like a combination of apple cider vinegar and lemon for the tang, baby! 🍋 tip: this keeps well in the fridge and flavours develop overnight ✔️ 2 bunches beetroot
3 garlic cloves, chopped very finely
Fresh Mint, finely chopped
Fresh Curly parsley, finely chopped
Extra virgin olive oil
Salt and pepper to taste
Splash of apple cider vinegar
Juice of 1 lemoni
1. Cut beet bulbs off the leaves, Leaving an inch of stem and leaving the bottom root. Set aside leaves, these are beautiful boiled and made into Horta.
2. Place beet heads into large pot boiling water. Boil 1 hour, or until skewer goes in with slight resistance. This will determine how soft or hard you want the beet to be. Boil 1 hr 20 mins for softer beets.
3. Turn off stove, top with some cold water to lower water temp a bit, and leave as is (in its own juices) an hour. This will ensure flavour remains intact.
4. Strain. Put on food grade gloves, trim off stem and root base. With fingers, peel off skin. Chop into large chunks.
5. Place in bowl and season with oil, salt, pepper, garlic, lemon and vinegar to taste. Adjust seasonings to desired taste.
Korean Beef Bulgogi
½ pound thinly sliced beef
¼ onion, cut into shreds
1 tablespoon oil
2 tablespoons soy sauce
1 tablespoon mirin (rice vinegar)
1 tablespoon sugar
1 tablespoon grated ginger
1 teaspoon corn starch
2 teaspoons water
1 tablespoon sesame oil
1 stalk scallion, chopped
1 teaspoon roasted sesame seeds
In a bowl, whisk together soy sauce, mirin, sugar and grated ginger, set aside
Pour the sauce mixture over the beef to mix the sauce well
Marinate for at least 30 minutes
Heat oil in a pan over low heat until shimmering, add in the onion and sauté about 5 minutes or until soft and lightly browned
While the onion is being cooked, mix corn starch with water and pour the starch water and sesame oil over the beef, gently rub the beef to make sure it is well coated
Add the marinated beef into the pan on top of the sautéed onion, then spread it out evenly over the pan with a pair of chopsticks and let cook for 4-5 minute until cooked, stirring occasionally.
Sprinkle with sesame seeds and chopped scallion, continue cooking for 30 seconds
Transfer to a plate to serve with rice or salad, voila! #lourvecook
