Take in a dish: .
- 4 cups chana(gram) flour .
- 4 tablespoon solid ghee(clarified butter)
- 2 teaspoon baking powder .
- 2 cups warm water(add 1 teaspoon egg yellow colour in the water)
Make a runny dough, it shouldn't be watery & not very thick as well. Whisk very well so there's no lumps.
Heat oil in a deep pot on high heat
Run the batter through a spoon which has medium round holes(not very small), Don't over put batter, only enough batter to run through the spoon once at a time & fry till crispy(they should be slightly brown). Do this till all your batter finishes. .
Now make the syrup .
- 3 & half cups sugar
- 2 & half cups water
Boil till thick & sticky when you feel with your fingers. Once syrup is ready add in few drops of rose essence & stir it well.
Now put the kani in a dish, sieve the syrup over the kani & add in: .
- 1/4 cup chopped pistachios .
- 1/4 cup chopped almonds .
- 1 teaspoon crushed cardamom .
- 1 tablespoon white poppy seeds
- Handful of sultana
Mix nicely with a spoon, cover it & set aside till completely cold.
Once cooled, make even round balls.
