I have a thing for rainbow veggies and for Pan Asian food. I was the sort of kid who would hunt the veggies from her noodles instead of the other way around. Just something about crisp, colorful veggies, I like to think that my stomach does a happy little dance at not being fed cholesterol heavy chhola bhatura or kachoris for a change.
I had recently bought some rice sheets from Modern Bazaar. Mom got a trial go at them, made some spring rolls which she deep fried, but the rice sheets were so thin, that they absorbed the oil in similar quantities of me absorbing a bottle of whiskey on a wednesday night after 3 days of work and 3 more to go. COPIOUSLY. I decided to pan fry the rolls and also sort of protect them with a layer of sesame. It would add that extra crunch and the rice sheets would maintain distance from the oil.
It was also my first expedition to make peanut butter. I wanted to make a satay sauce sort of thing and went out to buy peanut butter since its not a regular thing used at home, however only the huge 1 kg jars were available. Suddenly I remembered that a friend's mom (Thank you, Isha Aunty!) had told me how easy it is to make it at home. I added roasted fresh red chilli for a smoky flavour and balanced it out with honey.
