Let me introduce you to my favorite green. I'm generally averse to green leafy vegetables, but roselle, or gongura, has a special place in my heart. Roselle found in Maharashtra tends to have a pale green stem, while the roselle found in south India has a red stem like you see here. Roselle has an incredibly tart flavor when cooked, and tastes amazing in almost every form. The leaves are studier than spinach, so they can be curried and even pickled. Another great way to eat roselle is by boiling the leaves and then blended with garlic and chili peppers. The blend is then mixed with flour and turned into parathas. The flour and spices temper the tartness of the leaves, and it's a perfect blend of flavors. Added bonus, roselle is incredibly high in folic acid and iron, making it fun and healthy.

Grilled bone-in ribeye, caramelized shallot & balsamic redux infused wild mushrooms, garlic roasted fingerlings, charred cocktail onions, and some arugula (because I needed some color and some balance!) Herb salad of celery leaf, parsley leaf and chives. Added a great boost for the steak and mushrooms!

Dum Ka Keema- Marinated over two days, smoked with coal, garnished with fresh ginger and onion slices this minced meat recipe is fit for the royals! I always thought this was a tough to get right but finally cracked the right portions for the perfect amount if marination and spice blend.
2 pounds of minced beef
2 tbls of raw papaya
1 tsp poppy seeds
4 tbls of dry, roasted chana without shells
3 green cardamom
4-5 black pepper corns
1/2 tsp ground all spice powder (garam masala)
1 tsp red chilli powder
1.5 tsp salt or to taste
1 cup greek yogurt whisked
1.5 tsp ginger and garlic paste
1 tsp ground cumin
1 tbls ground corriander
2 onions sliced, browned and crushed.
2 tbls lemon juice
3-4 tbls cooking oil
2 pieces of coal
Wash your minced meat. Let the waiter drain till it is completely dry, pat with a paper towel. In a spice grinder add cardamom, cloves, pepper corn, chana and poppy seeds. Grind till powdered. Add the blend to the meat along with all remaining spices and ingredients besides the coal and browned onions- ( ginger, garlic, yogurt, papaya,cumin, corriander, lemon juice, all spice powder, red chilli and salt ) Marinate overnight for best results. To cook, heat oil in a pan and add the meat- stir frequently. When the oil begins to seperate add the crushed and browned onions. Cover and cook on medium heat for 15- 20 minutes. Seperately on the stove top heat two pieces of coal till it turns grey. Place the hot coal on pieces of foil directly over the cooked ground beef. Now drizzle a few drops of oil on the hot coal and immediately cover the pan for about 10 minutes. Garnish with cilantro, sliced onions, ginger and green chilli. Serve with pipping hot naan.
