About the other night 😍 I'm a big fan of chicken. I love how versatile it is but I have to admit..I get stuck in my usual ruts 🤷♀️ so when I was flipping through one of my favorite cook books ( Donna Hay) I saw all the ways in which she boils chicken and just had to try it Mexican style 💃 You guys, it will not disappoint I promise. So easy and such a fun way to add flavour
5 chicken breasts
1 tbsp olive oil
1 jar green salsa
1/4 cup chicken stock
Bunch of chopped cilantro
Salt & Pepper
in a large pot with olive oil pan sear the chicken breasts (on both sides) until brown. Pour in your jar of salsa, cilantro, chicken stock and salt and pepper. Bring to a gentle simmer, cover and let cook on low for 20-25 mns. When it's done, remove the chicken and shred with two forks. Meanwhile, reduce the "sauce" on medium. Add the chicken back in and use however you like! Personally I was into fajitas that night and loved every friggin bit of it 🙌

Sumos and pregnancy! (Or not)
One of the best exercises to activate and strength the pelvic floor! From what I hear that’s an important muscle for delivery 😉 These are also great for anyone who is not preggo too!
Sumo deadlifts are a great compound movement which works the glutes, back and core. It requires stabilization and activation of all 3. I love this sumo because it is low impact and versatile enough to do during pregnancy at all stages!
With this exercise it is important to pick a weight which does not cause straining and allows you to keep proper form. You will notice I stop at the stop and do not add in a pelvic tilt or thrust forward. This actual puts your back out of align and can cause injury-especially during pregnancy. This is a up and down movement!
Add this in your next leg or back day!

We are saying goodbye to summer as Jeff and Judah start school this week.
To be honest, I'm a creature of habit. I crave routine, so I'm generally welcoming of back-to-school time and the routine it brings. (Our kids thrive in it too.) But.... I love summer. I love our family. I love random moments together. I love the memories we make. I love how care-free and simultaneously crazy it can be.
And it always goes too quickly.
So bittersweet is the word of the day.
Come tomorrow morning, I'll be missing this view, but so thankful for the memories and excited for all the good stuff to come.

Sometimes, you need to listen to your body. And that’s exactly when I did this weekend.
I signed up for Anchor Down 12 Hour in January with the intention of running 62+ miles for a new 100K PR. Then I found out I was pregnant in May.
By Wednesday night this week I felt wore down and knew it wouldn’t be the best thing to force myself through an overnight ultra on Friday after working/driving all day long.
Instead, @frank.alessandrini and I headed up to Schroon Lake to run ~20 miles in the Pharoah Wilderness on Saturday morning after a full nights sleep.
It was just what we needed. Saturday wasn’t about chasing goals or shooting for a new PR. It was about spending time together doing something we both love.
I’m grateful to have such a supportive life partner. ❤️

Caught in the act! 😆 I hear frequently: What do I do when a craving hits?⠀
First: Ask yourself is it worth it? (Ie, random bag of potato chips - typically no. Fresh pancakes and biscuits/gravy on a Sunday after church? You had me at hello!)⠀
I tell my gals that we are never about deprivation - so eat half. Or what you need to feel satisfied. Don’t eat until sick and sabotage the rest of your day or the results you’re seeing! ⠀
My results on the other hand... well they’re getting BIGGER. 🤰🏻 😆You know what they say... “to everything there is a season.”⠀
With 3 weeks left until this baby... I’d say now is the season! #passthebutter#sundayvibes ⠀
All weekend I got the sweetest bits of “you don’t even look pregnant” and I’m like you people are crazy because this belly of baby and Menchie’s is a-poppin’! But keep feeding me the “you’re so tiny” kindness as I indulge in Cake Batter fro-yo with crushed Reese’s, pretty please 😂
Vic is all about chocolate fro yo and more chocolate toppings, while the kiddos go for the crazy fruit flavors with gummies and sprinkles and I’m over here loving a vanilla base with chocolate and PB toppings...what’s your favorite?!

One of the occasional meals we’d have growing up on a busy night was hamburger helper. I loved it! Though now that I’m a bit more aware on what kind of things are in a boxed meal like this I’ve chosen to steer clear. There just too many preservatives and junk in them. SO, I decided to attempt a healthier version that my family with food allergies (gluten & dairy) can eat and enjoy! And y’all broke my inbox wanting this recipe so, HERE IT IS! 🤗
WHAT YOU’LL NEED:
* 2 tbsp. Coconut oil
* 1/2 cup finely chopped yellow onion
* 1 tbsp. Minced Garlic * 1 cup finely chopped bell pepper
* 1 cup finely chopped carrots
* 1 lb. ground beef
* 1 tsp. kosher salt
* 1/2 tsp. black pepper
* 1/2 tsp. garlic powder
* 1 tbsp. paprika
* 2 tbsp. tomato paste
* 8-10 oz. dried elbow pasta (I use truroots quinoa elbow pasta)
* 3 cups beef broth- choose no salt added or low sodium
* 1 cup canned coconut milk
* 1/4 cup freshly chopped parsley (optional)
1. Heat a very large skillet, over medium-high heat. Add coconut oil, onions, bell pepper, carrots, garlic and ground beef. Season with the salt, pepper, garlic powder, and paprika. Saute, breaking up the ground beef with the back of a spoon, until the beef is cooked through.
2. Add in the tomato paste and stir to combine.
4. Add the pasta, the beef broth and the coconut milk. Stir to combine and let cook until pasta is tender and the liquid is soaked up.
5. Remove from heat and add in the cheese if you want it. Hubby said he preferred it without!
7. Serve and enjoy!

I think all of us can say that we wish for our kids to live long and HEALTHY lives...right? We wish that from the very second we learn that they exist inside of us. But for some reason, we lose a very critical step in making this happen...taking care of YOU.
As a mom, it’s SO easy to put ourselves on the back burner, to put all of our energy into helping these kids flourish and grow....but we cannot do this successfully if we aren’t SHOWING them that caring for ourselves is important. Kids learn WAY more from what you are, what you show them, what you LIVE...than what you say. We’ve all heard “actions speak louder than words” and it is SO ridiculously true.
Stop using them as excuses.
Stop pretending you don’t have the time.
Stop lying to yourself...you are so much better than that.
START showing them that self care and self love is important. It all begins with YOU.

#tbt to a time when I had more energy, a flat stomach, and felt like doing more than sitting on the couch watching true crime stories all day. 🤣😂 being pregnant has changed my view of my body soooo much. I have a new found appreciation for the amount of energy I had prior to pregnancy. And I have now learned how to listen to my body and slow down when needed. Mostly because I’ve been forced to. There is no pushing through pregnancy exhaustion. There are days where I forget I’m pregnant and the days where I’m just living out my normal life. But man im 22 weeks pregnant! To be honest, I’m so proud of the women I have become. Since I was 18 Iv had a rough life but Iv definitely achieved all the goals Iv planned for myself. My life is beautiful and a wonderful story I can’t wait to tell my son and future kids later on in life. Iv worked so hard for the women I am. A lot of friends and family have seen this growth within me. Honestly I’ve done so much for only being 23. Traveled, tried new things, faced my fears & challenged myself. The person I am today is what I grew to be. Only god knows when it’s your time to be a mother. I am going to be a mom to a little boy. This first boy in our family. This is so special to me & to all of us. My fitness life is still continuing & only making me stronger. Work is still easy and I plan to keep going until the month I give birth. I challenge myself because I know I can do this. I just wanted to say in the beginning of this pregnancy, it scared me. To think about life & how I could raise a child when I still feel like I’m growing but it’s not just me. My husband and I are growing together. We are bringing this new life into the world. We are going to be such awesome parents and I’m so happy it’s with Fernando. I’m so thrilled for this path God picked for me, for us and everything he has in store. Our body’s are beautiful & we are so powerful! Never let any fear or challenges stop you from doing the things you always wish on. We love you Maverick! Keep kicking & growing buddy. You are a future athlete in the making with all your moves I can feel inside me!

If there’s one thing I’ve learned since being pregnant, it’s that a woman’s body is a damn magical vessel! 🦄
The first picture was when I had just found out I was pregnant. The second picture was today when we hit the official 19 week mark. Sure, it’s hard to watch my body go in reverse after putting in the work to lose weight, but knowing my daughter is growing like a little weed (or a mango 🥭 according to my app), is worth every bit of cellulite, stretch mark and pound gained.
If there is one thing I can teach my daughter throughout this whole journey, is that you never give up when times are hard. It’s easier for me to skip a workout, eat poorly, sleep my days away, but that proves nothing to myself or her. So I’ll keep pressing play, pushing myself to the best of my abilities (modifications and all), giving my best because that’s what I and Baby B deserve and leaning into my girls because they keep me going.
Door is always open for you girl whenever you need that extra push ❤️

Some folks think I posses some superhuman ability to be able to still be crushing this 100 workout program right alongside girls who have competed in fitness competitions, avid runners, powerlifters and I’m here to show that you don’t have to be any of those [awesome] things to make progress. To just get started. To baby step, heck tip-toe in the direction of your longterm goal.
Y’all my long game is not to be in amazing shape right now. I know - y’all are disappointed I’m not entering a bikini contest 🤪 My sights are set on labor, postpartum recovery, creating habits so when life gets batshit crazy with a 3rd baby during the holidays I can fall back on the discipline muscle I developed these last few months to keep moving my body. To continue to lead my family by example in taking care of this precious gift of MOBILITY when so many don’t have that choice. To remind myself that I can do hard things.
I hear from so many mamas that they feel like they’ve lost themselves, let themselves go, carry heavy mom guilt if they spend any money on themselves while pouring $ into their kids activities, want to feel sexy again.
Guess what? That discipline muscle is still there! It just hasn’t been tapped into in a while. It needs a little oomph, it needs to be worked, to get sore and to be pushed again. And one day, when the motivation is fleeting, you’ll surprise yourself when you flex that discipline muscle and get the dang workout done anyway.💪🏼
Then, I’ll show you a proud, confident woman who’s finding her groove again.💜

four weeks postpartum & are those ABS i see coming back?! it took two weeks for my stomach to flatten back to normal and about three days ago i started seeing abbage again without working out at all. i thought they were lost forever but i’m so happy to see that something was left behind 😂

Happy Sunday and new week. How are you preparing to go into this new week? Meals prepped 🙌🏾. Going to plan workouts this evening, plan out my week and do a face mask.
What we prepped this week:
Meal 1: Spinach stew with chicken eaten with rice and black eyed peas.
Meal 2: Couscous stirfry with garlic butter salmon
Breakfast/snack: bacon egg muffin
Juice: watermelon, green apple, lemon and cloves. . .
Meal plan and prep tips
1. Decide what style of meal prep and plan works best for you. Daily meals, prep all meals for the week in 1 or 2 days, prep veggies and have some protein already cooked to make cooking easy and for salads) choose wisely because this can make or break your plan.
2. Will you grocery shop all at once or do a couple grocery trips throughout the week?
Pro tip: plan all these with your family or the people that this will affect.
3. Make a food table, know what you will be having for breakfast, lunch and dinner each day while leaving room for some flexibility.
4. If you don't cook plan the places you will get your food throughout the week. You could place orders for meal deliveries or pickups and know what your meals will be for the week.
Steps for Prep:
1. Choose your protein
2. Choose your carbs
3. Choose your veggies
4. Choose the fruits you want to eat for the week
1. Choose the method of cooking
Will it be stirfry, stews, casseroles etc
2. Prep fruits and veggies for smoothies and juicing or just for snacking and pack them away (this is especially useful if you work and have to leave the house at a specific time daily)
3. Make sure everything you have in the fridge has a meal they are assigned to, do this by finding recipes that match your ingredients. Learn to improvise and don't be scared to make your own recipe as you go.
4. Prep or cook according to the initial meal prep style you choose.
Pro tip and absolutely important: always choose foods you enjoy first and gradually each week choose 1-2 ingredients you haven't tried before. Don't cook meals you know you wont eat, you will end up wasting a lot of food which is essentially like throwing your hard earned money into the bin.
