This was my lunch yesterday! 😋 I had 1/2 an Ezekiel bread tortilla🌮 with my mom’s homemade refried beans made in the @instantpotofficial , enchilada 🥫sauce, lots of broccoli🥦, and some guac🥑 on top! Made a second batch of homemade chocolates. Went with semisweet. These are like Dove kisses minus the foil quotations. Experimented on some of them with a little bit of almond butter filling. Super good! Great way to use that awkward amount left — not enough for toast or a topping on something, perfect for homemade chocolate filling.

Wondering what to do with those beautiful, bright orange persimmons you see at the @texasfarmersmarket or got in your @imperfectproduce box? Here’s how our family enjoyed them with dinner last night! . Roasted Brown Butter Persimmon Salad with White Balsamic Maple Vinaigrette . INGREDIENTS: 🍃Brown Butter Persimmons (inspired by @food52): • 4 ripe Fuyu persimmons, tops removed and halved (ask your produce guy or local farmer to select ripe ones if you aren’t sure) • 3Tb @kerrygoldusa grassfed butter • 2Tb maple syrup (grade B recommended) • .25tsp ground cinnamon • .25tsp ground ginger root • .5tsp pure vanilla extract • 2Tb fresh lemon juice . 🍁 White Balsamic Maple Vinaigrette: • 1/4 cup extra-virgin olive oil • 2tsp white balsamic vinegar • 1tsp Dijon mustard • 1Tb maple syrup • sea salt & fresh cracked pepper to taste . Salad Greens & Garnishes • desired amount of fresh arugula (Austin locals, @fstop_farm is the only way to go, in our opinion!) • fresh feta cheese (Austin locals, we suggest @purelucktexas’ award winning goat’s milk feta!) • @harpersoul Turmeric Cracked Pepper Nut Blend . INSTRUCTIONS: • Preheat oven to 350deg Fahrenheit • Set aside the butter and washed/cut persimmons. In a small bowl, whisk together the remaining Brown Butter Persimmon ingredients listed. • In a small skillet, melt butter over medium-low heat until brown and tastes nutty, about 5 minutes. • Add persimmons, cut side down, and cook without moving until lightly browned, about 3 minutes. Flip and cook, without moving, until browned on the other side, about 3 more minutes. • Once persimmons are evenly browned, add the maple syrup mixture to the skillet and gently shake the pan to mix evenly. • Transfer persimmons to a glass baking dish, spooning all liquid in the pan over the fruit, cover with foil and place in preheated oven on the middle rack. Bake until persimmons are soft and caramelized, about 40-50min depending on the ripeness of the fruit (taste at 40min). • While the fruit bakes, combine all vinaigrette ingredients in a blender and blend until fully emulsified and there is no oil separation. • Instructions continued below in comments.
