Back in 🇺🇸 and woke up at 3:30am thinking about this lunch @rijksrestaurant It’s easy to forget that ingredients as simple as cod and chicken can become works of art in the right hands. And that last course...they call it the Holy Trinity of ‘Leidse Blaarkop’ Milk: butter, buttermilk and Leidse cheese. Leidse butter is a South Holland tradition and there are only 10 Leidse cheese makers left. Definitely the best cheese course I’ve ever eaten.
Not sure if this is unusual, but it weirds me out how much I enjoy my own cooking sometimes. Lunch today was a smoked salmon bagel sandwich (gluten free) with spinach, avocado, cucumber, capers, fresh dill and fried egg with roasted potatoes and shallot.
