Rigatoni alla vodka for lunch. I made it live so I had to eat it. Maybe Ill do that live too next time😂. In all seriousness this is such a quick recipe that you can find below. Have a great weekend 🤟 . Ingredients 1/2 pound rigatoni 1/2 cup pecorino Half a small onion chopped 2 Tbsp olive oil 2 garlic cloves minced 2 ounces prosciutto chopped 3 ounces tomato paste 3/4 cup heavy cream 2oz vodka, 2oz dry white wine 1/2 tsp crushed pepper Salt and pepper to taste 2oz pasta water . ▪️Boil pasta al dente and save some pasta water ▪️saute prosciutto for 5 minutes on medium heat in 2 Tbsp olive oil. ▪️Saute garlic and onion for 3-5 minutes on medium heat ▪️Add 🍅 paste and cook for 3-5 minutes more. Add red pepper flakes. ▪️Add wine/vodka and bring to boil for 2 minutes stirring it all together. ▪️Remove pan from heat and add cream. Stir together completely then return pan to medium- low heat. ▪️Add pasta and thoroughly coat with sauce. Add cheese and continue to mix. If sauce is too thick thin with 1 or 2 Tbsp of pasta water. Taste test and adjust salt. ▪️ Serve with more cheese. The ever inspiring Esquilino market in the heart of Rome, which at current moment of hatred and hostility towards all NONE Italians (the poor ones, mind ya), seems to be a happy(ish) bubble of coexistence and integration. Today a Syrian cook from a nearby restaurant treated me to the only 2 bunches of radishes left on the stall. He had got em all for his Syrian restaurant, and when I asked for a recipe, he simply said salad! Then he said we and Iranians are cousins, brothers. And it made me so happy, because the dream of a united and brotherly middle east is still far from us. The Bangladeshi guys asked me whether I wanted Lebanese or Egyptian tahini. I chose Lebanese. Bought Iranian pistachios, local Italian pomegranates (its insane to buy imported pomegranate when they grow almost everywhere in Italy). I watched the old ladies buy meat and fish from Arab butchers. This grey, rainy day is the perfect time to treat yo’self to a bowl of carby sunshine. This creamy lemon pappardelle with zucchini and arugula comes together in the time it takes to boil water, and tastes like springtime bliss. Recipe inspired by the domestic goddess @nigellalawson ✨ . . . What you need: -8oz pappardelle pasta - zest & juice of a small lemon - 1 egg - 1/3 cup cream - 1 clove finely grated garlic - 1/2 cup finely grated Parm - 1 zucchini ribboned w a vegetable peeler - handful of arugula - 3 Tbsps Butter - salt & pepper to taste - 1 cup reserved pasta water - micro greens, parsley, & extra parm for garnish. What to do: - Get pasta water salted and boiling in a large pot. - in the meantime whisk lemon juice, zest, egg, cream, garlic, parm, salt & pepper in a bowl and set aside. - cook pasta and when there’s 30 seconds left to go, drop in zucchini ribbons. Reserve a cup of pasta water. - drain pasta and zucchini, return back to the pot and add butter. - splash a few drops of pasta water into the cream mixture to temper the egg, then pour over pasta and zucchini and toss.
