As of today I am a permanent resident of New Zealand. I’ve been here 6+ years now and I’m still pretty stoked to be able to be here. Had I gotten off my butt sooner I’d probably be a citizen by now, by it is what it is, and I can freely come and go as I please for the rest of my life now. I've been lying in bed, trying to figure out what to have for breakfast and now it's L U N C H time ... 😲 How did that happen..

I had chicken stock, potatoes and carrots so stew was pretty much a given for tonight's dinner.
Take 2 onions, roughly sliced, and sweat em out with a little butter. Add 4 carrots and 6 celery sticks, chopped into medallions, after 2 minutes. Season with s+p.
Add 6 quartered potatoes, 3 cloves of minced garlic, 3 bay leaves, 2 tbsp of fresh thyme leaves and 2 cups of stock.
Whike this is cooking, brown your chicken pieces in a pan. Turn them over halfway through, at about 3 minutes. Into the pot they go!
Let it burble for 20 minutes or so until you can stick a fork through the potatoes. Season again with s+p, as needed and chop fresh parsley over everything.
This is a perfect meal as far as I'm concerned. Reminds me of my grandma.
