It’s that time of year for chili... even if it is still 80 degrees and sunny... 🙃☀️
This chili is made in the crock pot so u can just chop n CHILL!! Let the crock pot do all of the work
I make my homemade corn chips for dippin and top it with cheddar cheese
• 1 onion chopped
• 1 Bell pepper chopped
• 1 package extra lean ground turkey • 1 can red kidney beans
• 40 grams frozen corn
• 3 grams Better Than Boillon Chicken Base
• 1 10oz can Rotel Diced Tomatoes and Green Chili’s 🌶
• 1 8oz can of tomato sauce 🥫
• 1 bay leaf🍃
• 1 tsp cumin
• 1/2 tsp red chili powder
• 1/2 tsp paprika
Chop the onion and pepper and sauté in pan until cooked. Add into the crock pot.
In the same pan cook the turkey meat and add to the crock pot.
Add the Chicken base to 1/4 cup of water and add. Now add the rest of the ingredients and spices!!
Cook on high for 4 hours or low for 6

I’ve found over the last few years that I actually freakin LOVE cooking! Prep work starts over the weekend and we officially start on Monday. This will be a 5 day group for you to have fun and find some yumminess. We are going to get our bodies moving a little and eat some yummy stuff. Only requirement is that you have a crockpot. .

My pot roast was a huge success!! Altogether this was in the crockpot for a lonnng time because I started this late last night as it worked with my schedule. I got a really awesome deal on some round roasts this week! You can swipe to see my process. I seasoned the crap out of both roasts with salt and pepper and let them sit out for about 30-40 minutes. During that time I chopped and seared the veggies. Then I seared the roasts on all sides. I lined the crock pot with the veggies around the roasts addd fresh thyme rosemary and 5 minced garlic cloves. Now you don’t see the veggies in the final shots bc they became mush which I figured would happen and I’m storing them to eat separately. I took them out this morning and set them aside. At around 12 this afternoon I turned the crock pot down to warm until 4 and then I separated the juice from it and simmered on the stove with 2tsp of xantham gum until it thickened into a gravy. The entire family ate this meal which is always a victory. I’m usually making separate meals for myself.
Still 5 days away from it officially being Fall, but who cares. @kmtaleho Stew cravings kicked in early.
I put beef, lager beer, onions, thyme, nutmeg, carrots, parsley, green beans, brown sugar, tomato paste, salt n pepper, and Dijon mustard in this one.
The mashed potatoes have fresh chopped garlic, green onions, cream, salt n pepper, and butter. Whipped until very smooth.
Fall is around the corner and that means its time to bust out the crockpot!!🍁🙌 SLOW COOKER CHICKEN ENCHILADA SOUP
(Adapted from Gimme Some Oven)
41 ounces (2.56 lbs) boneless skinless chicken breasts
2 cups fat-free, low sodium chicken broth
1 can red enchilada sauce
1 (14 ounce) can fire-roasted diced tomatoes, with juice
1 (4 ounce) can diced green chilies
1 ¾ cups Rotel
1 clove garlic, minced
1 cup green spring onion, peeled and diced
1 tsp ground cumin
½ tsp salt
6 ounces low fat cheddar cheese
Add all ingredients in the slow cooker. Cook on low for 6-8 hours or high for 3-4 hours. You can also throw this is a stock pot for 20 minutes but would need to grill or bake the chicken first.
Garnish with 1 ounce of cheese per serving.
serving size approximately 1 1/2 cups
Makes 6 servings
Per serving: 1 leaner protein, 3 condiments, 3 vegetable servings
(Requires 1 fat option)

Crockpot Buffalo Chicken Spaghetti Squash & Carrots with Greek Yogurt Ranch Dip —
Squash cut in half with seeds scooped out face down on frozen chicken breasts, packet of ranch & franks buffalo sauce in the crockpot on low for 7 hours. —
Dip is nonfat greek yogurt and ranch mix!
Doesn’t get much easier .. or delicious 😍

250g Beef mince
100g Grated Parmesan
1 Mozzrella Ball
2 Shortcrust Pastry Sheets
1 Egg yolk
1. Cut the courgette into thin slices lengthways, then cook in a grill pan for 2 minutes on each side.
2. In a bowl, add the beef mince, grated parmesan, eggs, parsely and salt and mix together well. On a baking tray lined with baking paper, make a rectangle shape with the mince mix, then add a layer of grilled courgette on top, then a layer of sliced mozzarella.
3. Using the baking paper, roll the mince up into a sausage, then bake in the oven at 180°C for 15 minutes.
4. Unroll both sheets of pastry and make horizontal cuts 2cm wide across each sheet to give you strips of pastry. Peel alternative strips back in the opposite direction on one sheet, then add another strip from the second sheet perpendicular acroos the others, then fold the strips back over the top. Repeat this process to create a lattice.
5. Place the cooked mince sausage on the pastry lattice, then fold the pastry over the meat and brush the pastry with an egg yolk. Bake in the oven on a baking tray for 15 minutes at 180°C, then enjoy.

Meal prep does not have to take forever, and it doesn’t have to be fancy. .
Case in point: I make one big crockpot meal every Tuesday for dinner, because Wednesdays are crazy for us with kiddo extracurriculars and I know that all I will want to do is reheat some leftovers between activities. 😬
So for two days’ worth of dinners, the only real “prep” I had to do was make this marinade ☝🏼that I dumped over a pork tenderloin going into the crockpot. (Granted, I’d made some vegetables the day before, so I knew I already had those for sides.🙌🏼🥦🥬🙌🏼) My children are voracious beasts, so I also ended up having to microwave some sweet potatoes on the fly halfway through dinner.😜🍠🙄
I am not (ever) fancy! My kitchen is very often a hot mess! 🤷🏻♀️But I now have some tried and true recipes that are quick, clean, yummy, and crowd pleasing. That’s really all it takes. 🎉🎉🎉
