Slow cooker marble pound cake recipe.Very easy dessert cooked in slow cooker and served with homemade chocolate glaze. This tasty and tender cake can be dusted with powdered (caster) sugar and cocoa.
We cannot get enough of this two ingredient meal 😭 I found the most delicious organic Vietnamese coconut 🥥 lime curry sauce and dumped it into a crockpot with about 1.5 pounds of a lean pork (sirloin roast). Leave it cooking on low for 8-10 hours and that’s it! I added cauliflower rice on the side 🍚😋

Tonight’s dinner is freezer vegetable soup, in my new soup crock that I’m obsesseddddd with!! 🙃 I let it thaw in the fridge over night and then threw it in my mini @crockpot (I got it years ago for work and I still use it even as a SAHM, it’s the best!) Soup is the best on fall days! 🍁🍂
Anyone can make this amazing brisket recipe, featuring the mildly spicy yeehaw of sofrito (a traditional Latin-American cooking sauce of bell pepper, tomato, garlic, cilantro ... I like Goya brand, it's way easier than making your own and is only a couple bucks.. look for it in International aisle in market). .
As for the brisket, look for the lean Flat Cut , sometimes called center cut, first cut, etc... if confused ask the butcher., he's happy to help. The brisket usually sold in 2.5 to 5lb chunks, and this slow cooker recipe accommodates that range. I really like using this beef cut in my diet .. 3oz. cooked gives me 28g protein, 6 to 7g fat, 190 calories ..an just so dang tasty.
1 3 to 5 lb center cut brisket
1 white onion, chopped
1 chopped, seeded bell pepper any color
1 tsp salt, approx.
1 tsp ground pepper, approx
1to 3 teaspoons chipotle pepper
1 12 oz jar Sofrito Tomato Cooking Base .
1) Scatter chopped onion in base of large slow cooker. 2) Season both sides of brisket with salt, pepper and chipotle pepper 3) place brisket in slow cooker, fat side up. 4) Add minced garlic and jar of sofrito. spread around on brisket a bit 5) Place lid and cook on low for 10 hours. 6) remove from pot and let cool a few minutes, reserve cooking juice 7) slice brisket across grain into 3 big chunks 8) use back of forks to shred 9) add some sauce and onions/bell peppers from pot onto shredded beef to keep moist 10) season to taste with salt and pepper
Serve any way you like .. tacos, egg scrambles, on a sweet potato, as a sandwich, etc. .

Dinner for tonight (maybe two nights!) Chicken parm with Mac and cheese (not pictured). With the ability to move a little bit more than before, crock pot cooking has become essential. Just manage to walk enough to put ingredients in, seal it up, and let time do the work.

Enter here my Grandpa's Baked Beans. These were always a staple at family gatherings, and they still are! I remember the first time I made them for everyone; I think I cooked them for two days, as I did not realize you need to BOIL beans before you use them! Let's say I went through A LOT of sauce batches, as these non-boiled beans needed all the moisture. BUT, they ended up delicious still! The story is 15 sauce batches later, and two days cooking can do wonders for baked beans!
He also uses a very basic recipe that includes ketchup, etc. I have updated using healthier versions, but you could play around and use tomato paste and seasoning! I make mine in the crockpot; you can also make on the stovetop or the OG way in the oven.
These are so dark in color due to the molasses in them. Molasses is FULL of vitamins and minerals! And often an ingredient we do not incorporate enough.
Grandpa's Baked Beans
What you need:
2 lbs dried navy beans (soak overnight in water, make sure covered)
1/2 tbsp salt or to taste
1 onion sliced
8 tsp apple cider vinegar
2 tsp grainy mustard
4 tbsp of coconut sugar
1 cup of molasses
1/2 ketchup (I used @goodfoodforgood )
pepper to taste
Wash beans and soak overnight. Drain the next morning and rinse. Put in a large pot and cover with more water and bring to boil and simmer for 30 mins. Drain BUT keep water. Put sliced onions in bottom of a crockpot or dutch oven pan. Then add cooked beans. Mix all other ingredients and pour over top and mix, so beans are coated with the sauce. Then add some of the hot bean water so that beans are covered.
Cover and bake in the oven at 250 for 7-8 hours. Or in the crockpot on high for 2-3 hrs then turn to low for remaining time. Check throughout the day and stir often, use the leftover bean liquid and add to the beans if they look dry at all.

If you caught my story on Sunday, you will have seen something delish cooking in the crockpot! I've had mexican pulled pork sammies for lunch all week, and they are so dang good!
I made a simple coleslaw, piled up on dinner rolls. Super easy and delish!
The pulled pork is super simple. 1 pork shoulder, 1 diced jalapeno (I used 2 from my garden), 1 diced white onion, 3 cloves of garlic minced. 1 tbsp of dried oregano, 2 tsp of cumin, olive oil for the rub.
Season up the Shoulder, place in the crockpot. Cover with onion, jalapenos and garlic. Squeeze the juice of two oranges over top. Cook on low for 10 hours, or high for 6.
Lunch is a no brainer for the week!
