We had the pleasure of dining at Mister Tuna last evening. Mister Tuna is located in the industry building off of Broadway in the RiNo district. This restaurant is one of chef Troy Guard’s @cheftroyguard newest creations. We were in for a special treat last evening as well because after our dining experience the chef showdown took place. A very enthusiastic crowd cheered on two chefs, one from Hearth and Dram @hearthanddramdenver and the other from Uchi @uchidenver, in a head to head culinary battle. We were greeted by our hostess when we walked in and directed to the raw bar. Our waitress Emma was a delight (please ask for her). Join us on this amazing journey of foodie proportions. P.s. I was craving something different for breakfast and decided to whip up hash brown waffles using @alexiafoods frozen hash browns 🥔😍. All I did was add a few tablespoons of chickpea flour, a flax egg, turmeric, a pinch of sea salt, and some fresh cilantro and breakfast was done, after cooking them on my waffle maker of course 👩🏻‍🍳. This week felt like it flew by which is such a nice feeling. I don't work Fridays and love getting all the house work and errands run before the weekend. Unfortunately I woke up this morning not feeling well at all. Giving my self time to rest is something I struggle with. Not only is it hard for me to lie down for long extended times, but I'm constantly thinking of all the things I need to get done !! Does anyone elses struggle with this ? Trying to get back into the swing of things by going to the gym this morning after a busy holiday season 🙈 I for one can NOT workout on an empty stomach, first thing in the morning. I need a little fuel & this oatmeal was the perfect thing!👌🏼

Bowl Deets👇🏼
▫️1 cup Unsweetened Almond Milk (@lovemysilk)
▫️1/2 cup Rolled Oats (@bobsredmill)
▫️2 scoops Turmeric Tonic (@furtherfood)
▫️1 tbsp Pumpkin Purée
▫️1 tbsp Flax Seeds (@bobsredmill)
▫️3 tbsp Honey
▫️Dash of Cinnamon
▫️Dash of Nutmeg
▫️1/4 tsp Vanilla Extract

Start off by bringing 1 cup of the almond milk to a boil. Once boiling, add in the rolled oats. Make sure to stir quickly & frequently.
Once thick & creamy, add in all the remaining ingredients. 
Serve & top with some vanilla Greek Yogurt (@siggisdairy), pumpkin seeds (@natureseats), & hemp seeds (@manitobaharvest).

🥒 Zucchini Fried & Herb Dipping Sauce

Zucchini Fries:
▫️2 medium Zucchini
▫️3/4 cup Panko Breadcrumbs
▫️1/4 cup Parmesan Cheese
▫️1 Cage-Free Brown Egg (@vitalfarms)
▫️2 tbsp Water
▫️Salt & Pepper
▫️Chili Powder
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Herb Dipping Sauce:
▫️Plain Greek Yogurt (@siggisdairy)
▫️Lemon Juice
▫️Chives
▫️Dill, minced
▫️Salt & Pepper

Zucchini Fries: Slice the zucchinis into bite size pieces. In a bowl, mix together the Panko breadcrumbs & parmesan cheese. In a separate bowl, whisk together the egg, water, sprinkle of salt & pepper, & some chili powder. Then dip each zucchini piece in the egg, coat in the breadcrumbs, then back in the egg, & then more breadcrumbs. Place in the air fryer (@gourmia) basket. Fry in two batches, each at 400° for 10 mins.
Herb Dipping Sauce: Add in all ingredients to a bowl. Eyeball the ingredients, add as much as desired.

🍎 Spiced Apple Toast

Back to that work grind after the holidays but I’m totally okay with this two day work week (& 4 day weekend) 😜 Took some effort waking up this morning but felt good to be back in routine👍🏼 ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Recipe📝
▫️1/4 large Red Apple
▫️Coconut Oil (@vitacoco)
▫️Cinnamon
▫️Nutmeg
▫️Vanilla Greek Yogurt (@siggisdairy)
▫️Honey
▫️Multigrain Bread
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Cube the apple & sauté in coconut oil with a dash of cinnamon & nutmeg. Cook for just a few mins.
Top sliced toasted bread with Greek Yogurt & spiced apple. Drizzle with some honey & sprinkle hemp seeds.
