Me & @melbournemaker teamed up to test our capacity & speed in this 2 person, 3.2kg challenge, attempting to empty the contents in 15 minutes. We didn't quite reach this goal, after 20 minutes, we still had some bread remaining. 😂
I was pretty happy with my effort, finishing 1.5kg in the 15 minutes, & continuing to eat after time was up😂😂 If you wanna have a crack at this tasty challenge, you'd better hurry, as it's only around this month😎

🥬Spinach-Artichoke-Sausage Cauliflower Gnoccci🥬
This simple skillet dinner was 👍dang delicious! Had an extra bag of the Trader Joe's Cauliflower Gnocci in the ❄️freezer, and then just stopped at 🛒Aldi's for the rest of the ingredients!
◼️1 (8 oz) Bag Fresh Spinach
◼️1 (12 oz) Bag Frozen Cauliflower Gnocci
◼️1 Tbs Olive Oil
◼️4 Cooked Turkey Italian Sausages, Sliced (used Fit & Active brand at Aldi's
◼️2 (14 oz) Cans of Artichoke Hearts, drained & quartered
◼️1 clove garlic, minced
◼️1/4 cup Parmesean Cheese
1. Boil Turkey Italian Sausages in pot of boiling water until sausages are done cooking (Check internal temperature to have reached 165). When done cooking, remove from pot of water. Let rest 5 minutes to allow for cooling off. Then slice into bite sized pieces to be added to skillet.
2. While turkey sausage is cooking, on medium-high heat use a non-stick pan with 1 Tbs Olive Oil to sautee minced garlic for 1 minute.
3. Then add cauliflower gnocci to sautee until slightly Golden brown.
4. Drop heat down to medium. Next, add artichoke hearts to pan and stir until well combined and becomes warm.
5. Next, add fresh spinach a handful at a time and stir into skillet in between handfuls to mix until well combined.
6. Then add sliced Italian Sausage to mixture and mix until combined. Take skillet off heat and add cheese and combine.
7. Use pinch of cheese on top of dish to garnish final plate. Enjoy!

September is Heritage month and like so many proudly South African campaigns, CookHalaal will be sharing some of our favourite heritage style recipes with you. Rotis have become a large part of South African heritage with so many cultures and religions co-existing within one community. The roti exists as a comforting accompaniment to a rich meal of curries with variants sprouting from so many cultures. This stack was prepared by @aniseeds using her mother's age old recipe and of course, it's a winner!
My mother's roti recipe

10 rotis approx.
2 cups cake flour
1/2 tsp salt
3 tblsps oil
Approximately 1 cup (250ml) boiling water
Put flour and salt into mixing bowl and mix
Pour in oil and mix through well till combined and flour becomes crumb like
Put water on to boil in the mean time and just as it stops boiling, pour the water in (the amount of water used in the recipe depends on the humidity so it's always best to add most initially and then judge whether the entire amount is needed or whether you require a tad more)
Use a spoon to cut through the flour and water to mix through until the dough is well combined
Once it forms a ball, how's out onto a clean, floured surface and knead very well for about 5 - 7 minutes until smooth. The kneading process is important. (You should be able to poke the dough with your finger without it sticking to it)
Roll out into a rectangle shape and make indentations using your fingertips
Smear with ghee and then sprinkle liberally with flour. Roll into a swiss roll shape and slifr into even slices. Shape into bun shapes and roll out on a floured surface and roll thinly. I have to post this, since I thought it was the CUTEST thing to date Mason Has done. Our Elf occasionally leaves Mason gifts and notes.
