One of the best decision i've made this year (did not see this coming tbh)
This weekend i met loads of them who had choose this path and i realized that this might not be just another phase in my life. Those people, kind of helped me to understand that i too should choose this path and make this a forever thing.
I had fun last weekend. Enjoyed loads of tasty vegan foods, amazing talks and met incredible people along the way. It was an experienced and i hold it close to my heart. Universe has been so kind lately. Im in a good spot. #vegans

Vegan, gluten free, grain free, dairy free, egg free
2, 14oz blocks firm tofu
2 tbsp olive oil
½ cup favorite buffalo sauce (i love frank’s buffalo sauce)
2 stalks celery, diced (~½ cup)
½ small red onion, diced (~½ cup)
1.5 large carrots, peeled & diced (~½ cup)
1 cup spinach, cut into ribbons
¼ cup buffalo sauce
½ cup avo oil mayo (vegan if needed)
½ tsp salt, + more to taste
Black pepper, to taste
1 head butter lettuce
Optional: microgreens and sliced radish
1. Press tofu for 10 minutes by wrapping in linen and placing smething heavy on top. Cut into cubes and coat in ½ cup buffalo sauce + 2 tbsp olive oil.
2. Roast tofu on a parchment-lined baking tray for 30-35 minutes at 375F.
3. While tofu is roasting, add remaining ingredients to a large mixing bowl and stir to combine.
4. Add roasted tofu to mixing bowl and bring to room temperature. Move to the fridge to cool completely.
5. Once cold, serve buffalo tofu salad in butter lettuce cups.
6. Optional: top with microgreens and radish slices.
